FISH EGG FRITTERS

Hello, and welcome to my cooking corner again. In India, mostly people like to eat curries with chapatis, rice, etc. Many Indians like fishes a lot too and make it in different ways. Some make curries of them while others like them fried. Fish eggs are a sought-after delicacy too as these are not available the year round. This delicacy can be enjoyed only in the breeding season of fishes. Today I am here to share the recipe of a crunchy, tasty, and unique fritter recipe of fish eggs. These are made quite easily taking little time. So let’s start making this scrumptious snack right now—

Ingredients:-

  1. Fish Eggs-250 gms
  2. Gram Flour-150 gms
  3. Red Chilly Powder-1/2 tsp
  4. Chilly Flakes-1tsp
  5. Garam Masala-1tsp
  6. Garlic Paste-1tsp
  7. Fish Masala-1tsp
  8. Dry Mango Powder-1tsp
  9. Turmeric Powder-1/2 tsp
  10. Baking Soda-1tsp
  11. Salt-According to taste

STEPS

Step 1

Take a bowl and add fish eggs in it. Now add gram flour, red chilly powder, chilly flakes, garam masala, garlic paste, fish masala, dry mango powder, turmeric powder, baking soda, and salt. Mix it up well. There is no need to add water to it.

Step 2

Heat oil in a kadhai. Make balls out of the batter and deep fry them in the oil. Alternatively, you can shallow fry them in a pan too. Here I have shallow fried some patties and deep-fried some of the balls. Now take the fritters out on a tissue paper.

Note point:-This fritter can also be made by adding finely chopped onions and green chilies.

Finally our Fish Egg Fritters are done. Serve it with a dip or a chutney of your choice. Fish goes very well with mustard chutney too.

Masala Lady Finger and Ivy Gourd Fritters

MASALA LADYFINGER AND IVY GOURD FRITTERS

Hello, and welcome to my cooking corner once again. It is the rainy season here now and if anyone is craving for hot fritters like me to enjoy as an evening snack, you can make these fritters and relish them well. Though I don’t make fritters often at home but today I made them on the request of my daughter. These are spicy fritters of lady fingers and ivy gourd which are easy to make and so crunchy to eat. So let’s start with the recipe without wasting more time.

MASALA LADYFINGER FRITTERS

Ingredients:-For the Masala ladyfinger fritters

  1. Lady Fingers-200 gms
  2. Rice Flour-50 gms
  3. Refined Flour(Maida)-3 tbsp
  4. Onion-1
  5. Green Chillies-2
  6. Egg-1
  7. Ginger-Garlic Paste-1tsp
  8. Red Chilly Powder-1tbsp
  9. Garam Masala-1tsp
  10. Salt-According to taste
  11. Water-As required
  12. Oil-For deep frying

STEPS
Steps 1

To make the ladyfinger fritters, wash and chop the veggie finely. Chop the onion and green chilies finely too.
Step 2

Take a bowl and add the chopped veggies in it. Now add rice flour, refined flour, chopped onion, and green chilies to it. Next add the spices i.e., salt, red chilly powder, garam masala, and ginger-garlic paste.

Next add the required amount of water to make a thick batter of coating consistency. Adjust the amount of salt and spices in it by tasting the batter before frying.

Step 4

Heat oil in a deep bottomed kadhai and drop spoonfuls of the fritter batter in it. Fry till browned and crisp. Take out on a tissue paper. Keep aside.

Our Ladyfinger Fritters are done. Serve them with ketchup or dip of your choice.

IVY GOURD FRITTERS

Ingredients:-For the Ivy gourd fritters

  1. Ivy Gourd-100 gms
  2. Rice Flour-20 gms
  3. Refined Flour-10 gms
  4. Onion-1
  5. Green Chillies-2
  6. Egg-1
  7. Asafoetida-A pinch
  8. Red Chilly Powder-1tsp
  9. Garam Masala-1tsp
  10. Salt-According to taste
  11. Water-As required
  12. Oil-For deep frying

Step 1

To make the ivy gourd fritters, wash and chop the veggie finely. Chop the onion and green chilies too.

Now take a bowl and add the chopped ivy gourd, onions, green chilies, rice flour, refined flour along with the spices, salt, red chilly powder, asafoetida and garam masala.
Step 3

Add water to make a thick batter of coating consistency and heat oil in a kadhai. When the oil becomes adequately hot, drop in spoonfuls of the above-made batter in it. Fry till browned and crisp. Drain out on a tissue paper. Keep aside.

Our Ivy Gourd Fritters are done. Serve them with ketchup or a dip of your choice.

Desi Bihari Bhel

DESI BIHARI BHEL

Hello everyone and welcome to my cooking corner again. Today I am going to make ‘Desi Bihari Bhel’, a rustic Bihari snack which is easy and funky to make in the evenings or anytime. It is not an elaborate recipe and requires not many ingredients. I usually try to showcase those recipes which are simply made from readily available ingredients. It is called a ‘poor man’s snack’ in the rural areas of Bihar and can be made in a jiffy. It is a crunchy, curried snack that is very interesting to prepare. This can be made with any lentil or a combination of them but it should be spicy to eat. To serve this bhel, we firstly make the dal fritters and then we curry them or pour the gravy over the fritters. Then we add the garnish of puffed rice, finely chopped onions, green chilies, tamarind juice, green chutney over the fritters and serve. So let’s start with the recipe—

Ingredients:-For the dal fritters

  1. Chana Dal-250 gms
  2. Onion-1
  3. Dry Red Chillies-3
  4. Cumin-1/2 tsp
  5. Salt-According to taste

For the gravy:-

  1. Onion-1
  2. Ginger Garlic Paste-1tsp
  3. Turmeric Powder-1/2 tsp
  4. Coriander Powder-1tsp
  5. Red Chilly Powder-1tsp
  6. Garam Masala-1tsp
  7. Dry Mango Powder-1tsp
  8. Salt-According to taste
  9. Oil-2 tbsp
  10. Water-As needed

For the serving:-

  1. Puffed Rice (Murmura)-100 gms
  2. Onion-1(finely chopped)
  3. Green Chillies-2
  4. Green Chutney-1tsp
  5. Tamarind Juice-1tsp
  6. Chopped cilantro-For garnish (optional)
  7. Besan Sev-For garnish (optional)

Wash and soak the chana dal for 6 hours. Chop the onion and green chilies finely. Now rinse the dal and grind it coarsely. Mix in chopped onion, dry red chilies, cumin, and salt. Soak tamarind in water. Mash the pulp to get a slightly thick juice. Add some black salt in it. Mix and keep aside. This will be used at the time of the final serving of our bhel as a garnish.

STEP 2

Take a pan and add oil in it. Spread it around with a brush. Now make small balls from the batter and shallow fry in the pan. Take out and drain on a tissue paper.

STEP 3

Now to make the desi gravy of the bhel, take a pan and add oil in it. Add some finely chopped onions and green chilies. Fry for two minutes. Next add ginger garlic paste and the spices, turmeric powder, red chilly powder, coriander powder, garam masala, dry mango powder, and salt. Fry till done. Lastly, add water for a thick gravy. Simmer for five minutes before switching off the gas.

STEP 4

To assemble our desi bhel, take a bowl and place the fritters in it. Add in the puffed rice. You can fry the murmura a bit to get the crunchiness some more. Now pour the gravy we just made over and around the fritters. Pour tamarind juice. Garnish with finely chopped onion, green chilies, and some green chutney. You can add some besan sev or freshly chopped cilantro over too though it is optional.

Our DESI BHEL is done, ready to be served. Generally, it is had as a snack with some hot tea.

Shallow Fried Potato, Lentil, and Onion Tikkis

SHALLOW FRIED POTATO, LENTIL AND ONION TIKKIS

Hello and welcome to my cooking corner again. Today I’ll be sharing a snack recipe of Lentil Tikkis with potato and onion which is really handy to make and is ready in a jiffy. It is tasty and requires no special ingredients to make. Tikkis are eaten all over India and are a very popular snack here. People generally enjoy and relax while having tikkis along with tea in the evening. We make potato tikkis, different kinds of lentil tikkis, chicken and fish tikkis, panir tikkis and mixed vegetable tikkis.  Today, I have made this tikki with chana dal, onion, and potatoes, mixed in mild spices which is tasty to eat and quite easy to prepare too. I hope you guys will like it and give it a try sometime. So let’s start with the making—

Ingredients:-

  1. Split Bengal Gram or Chana Dal-250 gms
  2. Potato-1(big)
  3. Onion-1(big)
  4. Red Chilly flakes-1tsp
  5. Cumin-1/2 tsp
  6. Garam Masala-1tsp
  7. Grated Ginger-A pinch
  8. Dry Mango Powder or Amchur Powder-1tsp
  9. Salt-According to taste
  10. Coriander-1 tbsp (chopped)
  11. Vegetable Oil- For frying

STEPS

STEP 1

Wash and soak the dal overnight. Grind it coarsely in a grinder. Chop the onions and keep aside. Boil the potatoes and grate them with a grater.

Take a bowl. Add the ground dal, grated potato, chopped onion and parsley, grated ginger, red chilly flakes, garam masala, cumin, amchur powder, salt, and coriander and mix it well. Shape the patties as you want to. Keep aside.

STEP 3

Now heat a non-stick pan and add some oil. When the pan is hot enough, place the patties in the pan and fry them till golden brown.

Our Shallow Fried Potato, Lentil, and Onion Tikki is ready. Serve it as an afternoon or evening snack with tea or coffee.

Ivy Gourd Leaf Fritters

IVY GOURD LEAF FRITTERS

Hi everyone. Welcome to my cooking corner again. I am just back from a vacation to my mom’s place. And today’s recipe that I am going to share is Ivy Gourd Leaf Fritters. It is a classic, traditional recipe that is made in my hometown, Bihar. It is called ‘tilkora’ in my native language. It is a fancy preparation generally made on special occasions, festivals, and events when a special guest is supposed to arrive. It is a very crunchy and delicious dish. These leaves regulate blood sugar levels and treat diabetes. It is also useful to treat asthma, high cholesterol, and constipation. The fruit of these leaves are called ivy gourd, coccinea Indica or tindora in Hindi which is used as a vegetable. I have specially brought these leaves to make this special recipe for you guys. Hope you will like it and make it sometime. This recipe is a fried one, but in my next blog, I will share a shallow fried version which will be more likable to the health freaks. So let’s start with the recipe—

Ingredients:-

  1. Ivy Gourd Leaves-16
  2. Rice Flour-250 gms
  3. Wheat Flour-50 gms
  4. Salt-According to taste
  5. Turmeric Powder-1tsp
  6. Red Chilly Powder-1/2 tsp
  7. Garam Masala-1/2 tsp (optional)
  8. Dry Mango Powder-1/2 tsp
  9. Carom Seeds-1/2 tsp
  10. Vegetable Oil-For shallow frying

STEPS

STEP 1

Wash and wipe dry the leaves.

STEP 2

Take a bowl. Add rice flour, wheat flour, salt, turmeric powder, red chilly powder, garam masala, dry mango powder, carom seeds and make a thick batter of it with water.

Now heat oil in a thick-bottomed kadhai. Take one of the leaves and dip it in the batter. DSC03286.jpg

Now stick the second leaf on it. Repeat the same process till you have pasted 4 or 5 leaves making the fritter thick. Drop these fritters one by one in the hot oil. Fry till crisp and browned. Take out and drain on a tissue paper. Usually, I try to make oil-free dishes or ones which have very less oil. But this recipe is a specialty of our Mithila region in Bihar. So I wanted to share it with you all.

Potato and Wheat Flour Crunchies

POTATO AND WHEAT FLOUR CRUNCHIES

Hello and welcome to my cozy corner again. Today I will be sharing with you a crunchy-munchy snack, the Potato And Wheat Flour Crunchy which is really easy to make and more fun than you could feel when cooking. When you don’t feel like eating elaborately, you can instantly make it and have it with salads and a dip of your choice.

Ingredients:-For the wheat flour mini chapatis

  1. Wheat Flour- 2 cups
  2. Semolina-1 cup
  3. Salt-A pinch
  4. Baking Powder-1/2 tsp
  5. Vegetable Oil-2 tbsp
  6. Water-1 cup or as needed

For the aloo tikki:-

  1. Potatoes-3
  2. Onion-1
  3. Green Chillies-2
  4. Ginger Paste-1tsp
  5. Fresh or dry Mint leaves-5
  6. Red Chilly Powder-1tsp
  7. Salt-According to taste
  8. Garam Masala-1tsp
  9. Dry Mango Powder-1/2 tsp
  10. Vegetable Oil-1tbsp
  11. Panir-4 pieces

For the white batter:-

  1. Refined Flour-2 cups
  2. Salt-According to taste
  3. Baking Powder-1/2 tsp
  4. Oregano-A pinch
  5. Black Pepper-A pinch
  6. Paprika-A pinch

For coating purpose:-

Black Sesame-A handful

Finely chop the onions and green chilies. Boil, peel and mash the potatoes. Take the wheat flour in a bowl and add semolina to it. Now add the seasonings, salt, baking powder, vegetable oil and make a pliable dough from it adding water.

STEP 2

To make the aloo tikkis, take a pan and add 1tsp of vegetable oil in it. Now add the chopped onions and green chilies. Add the ginger paste and fry till browned. Add the salt, red chilly powder, garam masala, oregano and also add some cut panir, dry mango powder, and mint. Fry everything again for a minute and add in the mashed potatoes. Mix well. Now make out small patties from the batter.

To make the white batter, take the refined flour in a bowl and add all the given ingredients in it. Add water to make a batter with coating consistency.

STEP 4

Now take a small lump of the wheat flour dough and make a small chapati from it using a rolling pin. To make two crunchies, make out 4 small chapatis from the dough. Now to assemble the dish, take one chapati and put the potato patty on it. Put another chapati on it and then using some water seal the edges of the two chapatis. Now with a brush coat the front side of the crunchy with the white batter and sprinkle some black sesame seeds over it. You may alternately dip whole of the crunchy into the white batter, here I have coated only the front side.

Take a kadhai and add oil. When the oil heats up drop in the crunchies one by one into the oil and fry them till golden browned. Take out on a tissue paper.

Our Potato and Wheat Flour Crunchy is done. Serve it with mayo, mustard sauce and green chutney mixed together and salad. You can have it as an evening snack or at brunch.

These are tasty, flavorful and easily made and I am sure the fish lovers amongst you will like it better along with the others too. So let’s start with the recipe—

Ingredients:-

  1. Rohu Fish Egg -250 gms
  2. Gram Flour -150 gms
  3. Onions -2
  4. Green Chillies -2
  5. Ginger-Garlic Paste -1tsp
  6. Salt-According to taste
  7. Turmeric Powder -1tsp
  8. Red Chilly Powder -1tsp
  9. Cumin Powder -1tsp
  10. Aniseed Powder -1/2 tsp
  11. Dried Mint -1/2 tsp
  12. Garam Masala -1tsp
  13. Chat Masala -1tsp
  14. Lemon Juice -1tsp
  15. Baking Soda -1tsp
  16. Freshly Chopped Cilantro -1tsp

STEPS

STEP 2

Take a bowl. Add gram flour to it. Now add the fish egg. Also add the seasonings, salt, turmeric powder, red chilly powder, cumin powder, dried mint, ginger-garlic paste, green chilies, aniseed powder, garam masala, chat masala, baking soda, fresh cilantro, lemon juice and mix everything well.

Take a pan. Brush it with oil. Now take dollops of this fish egg mixture and place on the pan. Shallow-fry it till browned. Take out on tissue paper.

Bread and Fish Pakoras

BREAD AND FISH PAKORAS

Hello everybody. Welcome to my cooking corner again. Today I am going to share with you a snack recipe of Bread and Fish Pakoras. It is a crispy, fun and full-of-flavors-recipe to delight you anytime, anywhere. It needs basic ingredients from your pantry and the result is sure going to appeal to you all. So let’s start with it—

Ingredients:-For the fish marination

  1. Fish Fillet-200 gms
  2. Salt-A pinch
  3. Turmeric Powder-1tsp
  4. Garlic Paste-1tsp

For the refined flour coating batter:-

  1. Refined Flour-1 cup
  2. Rice Flour-2 heaped spoonfuls
  3. Salt-A pinch
  4. Red Chilly Powder-1/2 tsp
  5. Garam Masala-1/2 tsp
  6. Black Pepper Powder-1/2 tsp
  7. Dry Mango Powder-1tsp
  8. Carom Seeds-1/4 tsp

Other Ingredients:-

  1. Breads-4
  2. Tooth Picks-6
  3. Green Chutney-As needed
  4. Mayonnaise-As needed

STEPS

STEP 1

Wash the fish fillet. Marinate it with salt, turmeric and garlic paste.

STEP 2

For the batter, take a bowl, add refined flour, rice flour, salt, red chilly powder, carom seeds, garam masala, dry mango powder, black pepper powder and add water to make a batter of pouring consistency.

Take a pan and smear some oil on it. When appropriately heated shallow fry the fish pieces and take them out on a tissue paper.

STEP 4

Now cut the bread slices into triangles and put one fried fish on one of the slices covering it with the other one and securing them with some toothpicks. Next, dip this sandwich into the batter and fry in hot oil till browned and crisp. Drain excess oil on tissue papers.

Our Bread and Fish Pakoras are done. Serve them with green chutney and mayonnaise or a dip of your choice.

Jack fruit and Potato Kebabs

JACKFRUIT AND POTATO KEBABS

Hello friends, welcome to my site again. Happy Saturday to all of you. From yesterday I was in search of a new recipe and there was some jackfruit in my fridge so I decided to make these jackfruit and potato fritters in the evening. I think you guys will definitely like it as well. So let’s get started. Here is the recipe—

Ingredients:

  1. Jackfruit – 250 gms
  2. Potatoes – 2
  3. Onion – 1
  4. Green Chillies – 2
  5. Gram Flour or Besan – 3 tbsp
  6. Turmeric Powder – 1tsp
  7. Red Chilly Powder – 1tsp
  8. Garam Masala – 1tbsp
  9. Asafoetida – A pinch
  10. Coriander Powder – 1tsp
  11. Dry Mango Powder – 1tsp
  12. Salt – According to taste
  13. Sugar – 1/2 tsp
  14. Lemon Juice – 1tsp
  15. Chopped Coriander – A small bunch
  16. Vegetable Oil – For Frying

STEPS

STEP 1

Wash, cut and boil the jackfruit and the potatoes. Peel the latter. Finely chop the onions, green chilies, coriander.

STEP 2

Take a bowl. Add to it the jackfruit and potatoes. Mash them. Keep aside.

STEP 3

Take a pan and add the chopped onions and green chilies in it. Also, add the pinch of asafoetida. Sauté it for a minute. Now add the gram flour, salt, turmeric powder, red chilly powder, coriander powder, garam masala, dry mango powder and dry roast them on a medium flame for two minutes. Add the sugar. Take care not to burn them.

STEP 4

Now add this roasted spice mix in the mashed batter. Also, mix in the chopped coriander and squeeze some lemon juice in. You may also add cashews and raisins but it is optional.

STEP 5

Make out patties from it of any desired shape you want. And then fry it.

Our Jackfruit and Potato Kebabs are done. Serve them with mayonnaise and freshly cut salad.

Shallow Fried Sweet Potatoes

SHALLOW FRIED SWEET POTATOES

Hello and welcome friends again. Here I am today with a tasty side dish recipe which you will like for sure. As we all know sweet potato is a sweeter version of normal potatoes. We make many varieties of it, like, baked sweet potatoes, soups, salads, puddings, curries, stir-fries and many kinds of desserts too. It is rich in starch along with complex carbs, dietary fibres, and beta-carotene. And micronutrients like Vitamin B5, B6, and manganese. In my native place farmers after harvesting these sweet potatoes in November, roast, peel and eat it with black salt as their afternoon and evening snack. And they do the roasting in clay hearths which gives a very good taste to the potatoes. Today I decided to shallow fry them with mild masalas and wanted to share it with you all. So the recipe is as follows—-

Ingredients:

  1. Sweet Potatoes – 2
  2. Gram Flour – 1tbsp
  3. Rice Flour – 1tbsp
  4. Turmeric Powder – 1tsp
  5. Red Chilly Powder – 1/2 tsp
  6. Asafoetida – A pinch
  7. Garam Masala – 1/2 tsp
  8. Salt – According to taste
  9. Lemon Juice – 1tsp
  10. Chat Masala – For Sprinkling
  11. Fortune Vegetable Oil – For shallow frying

STEPS

STEP 1

Wash, scrape and cut the sweet potatoes into thick roundels.

STEP 2 

Take a bowl. Add to it the cut sweet potatoes. Also add the gram and rice flour, salt, turmeric powder, red chilly powder, asafoetida, garam masala, lemon juice and little water to coat the masala mix together.

Our Shallow Fried Sweet Potatoes are ready. Serve them with a sprinkling of chat masala, date chutney and other dips of your choice.
