San Jose is blessed with many Vietnamese-Americans, some of whom have become my dear friends over the years we’ve lived there. San Jose boasts many awesome Vietnamese restaurants. When we moved from California to the east coast, I had heard there were very few Vietnamese living here. So I was thinking I would not be tasting my favorite Spring Rolls any time soon.

Then … much to my surprise… we go out to eat last night at the Cheesecake Factory restaurant – of all places – here in our town in Connecticut, and what do I see on the menu?  Vietnamese Shrimp Spring Rolls!!! It feels like I’m back in San Jose again! The world is becoming smaller. And yes, they are as delicious as they look!
