Sorry guys, I haven’t been working this blog for the last several years! Kids have been growing up and we had cows for a while! Still have one little steer! And three (yes, I said that right) three horses! Don’t ask, no I don’t know what I was thinking!
Casey has been off work for a while and quite frankly neither of us enjoy going out to eat. Maybe that’s strange, I don’t know…I don’t know why he doesn’t but I don’t like having to put on pants!
So…I love Mexican food. We love to stop in East Texas and eat at a chain called the Jalapeño Tree (the one in Tyler is fabulous). They make a green dip that they serve with the appetizers chips that I could swim in! I can’t always drive to East Texas for a bite but I can usually figure out a good recipe for myself! So I sat down and worked on it for a while, last night’s recipe turned out great so I decided to share! Shortly after I finished making the dip, I flung my poor old blender into the garbage–16 years and it had had enough of my sauce making. Currently on the hunt for a new one and questioning as to why Dewalt has never gotten into making small kitchen appliances…
Jalapeño Tree Green Dip (copycat)
- 5 tomatillos
- 1-2 jalapeño (seeded)
- 1/2 diced onion (or 1 tsp onion powder depending on your preference)
- 1/3 cup fresh cilantro (may use dried but you will have to store in the refrigerator for a while before serving to let the flavor develop–again, flavor this to taste! Some folks don’t like that much cilantro)
- Juice of one lime
- 1 tsp garlic powder (could use fresh, again adjust to taste)
- 1 tsp salt
- 1 tsp black pepper
- 1/2 cup sour cream
- 1/2 cup buttermilk
