Energy Bites

This is one of those recipes that I made years ago and then promptly forgot about it....until I was at my daughter's house babysitting and my grandchildren were finishing off the bowl of them she had just made.

They are a small bite of sweet and crunchy and they are good for you.

Once you buy the ingredients for them, you can make several batches, and you will want to!

It is a very easy recipe.....no chopping or mincing....just measuring and putting it all in a bowl.


There is the little detail of rolling the "dough" into little balls (it makes about 60 depending on the size) and then you're done.



This little bite is full of protein, grains, seeds and sweetness.

Energy Bites

1 cup oatmeal
2/3 cup shredded coconut
1/2 cup peanut butter
1/2 cup flaxseed
1/2 cup mini chocolate chips
1/3 cup honey
1 tablespoon chia seeds
1 teaspoon vanilla

Mix all and refrigerate for a half hour. Roll into balls about 1" in diameter.
Store in the refrigerator.

3 Ingredient Pumpkin Cake


This post is from last Fall.

I thought it was worth repeating.

I just bought the ingredients to make this cake because it is time and I can't wait any longer! Isn't it funny how we don't make certain recipes until the "correct" season?

If you saw this post last year and saved the recipe, dig it out and start baking!



Have you seen the recipe for this pumpkin cake/bread that's been going around the blog world and Pinterest since last Fall? I first heard of it from my daughter Jena who said it was only 3 ingredients and really, really good.



I am particular about anything pumpkin I make so I was a skeptic. A box cake mix? Not for this from scratch girl. After all, I had been making the same pumpkin bread for over 30 years and it is all I'd make....until I tried this!! It is more than really, really good. It is stupid good (what exactly does that mean?!?).




There's the 3 ingredients.....spice cake mix, 15 oz. can pumpkin and 1/2 bag chocolate chips. I bought the mini chocolate chips by mistake but it turns out I like them better in this cake.




Preheat the oven according to the box for the pan you will use. Mix just the powdered spice cake (without adding water, egg, oil), the whole can of pumpkin and about 1 cup chocolate chips in a mixer till all combined. Spray your pan, spread it out and bake it for about 25 minutes (according to the cake mix box). Done!




No need to frost.


The texture is cake-y but with a sweet bread consistency. It is a pumpkin cakey bread. It is so much easier and so delicious that I have retired my 30 year old pumpkin chocolate chip bread recipe (for now). So sad.

Pumpkin Bread or Cake? 3 Ingredients!

Spring Cookie Bark

Happy First Day of Spring!

Does this look like Spring or what?!


The date on the calendar, not the weather, has inspired me to make something fun and colorful and Spring-y.

I found this fabulous looking bark on the blog Deliciously Sprinkled....a place to find all kinds of fun desserts.


It is a chocolate cookie dough base, covered with melted white chocolate chips and then sprinkled with iced animal cookies,  M & M's and rainbow sprinkles - or jimmies, as they call them at the ice cream parlor in town.


It is easy to make and you get to go out and buy lots of yummy ingredients....the kind I like to shop for!



The ingredient that drew me in were the PINK iced animal cookies! Here's the recipe:

M & M Chocolate Chip Cookie Bark

2 1/4 cups flour
1/2 teaspoon baking soda
1 cup (2 sticks) unsalted butter, softened
1/2 cup granulated sugar
1 cup packed light brown sugar
1 teaspoon salt
2 teaspoons vanilla extract
2 large eggs
2 cups semisweet chocolate chips
1 bag white chocolate chips
1 cup frosted animal cookies, broken
1/2 cup M & M's
Sprinkles

Preheat oven to 350 degrees F. Line a 13 x 9 pan with foil and spray with non-stick cooking spray. Set aside.

In a small bowl whisk together the flour and baking soda; set aside.

Using an electric mixer or stand mixer with the paddle attachment, combine the butter with both sugars; beat on medium speed until light and fluffy. Reduce speed to low; add the salt, vanilla and eggs. Beat until well mixed, about 1 minute. Add flour mixture; mix until just combined. Stir in the chocolate chips.

Press dough gently with floured fingertips to evenly cover the bottom of prepared pan.

Bake for 11 - 13 minutes (mine took 24 minutes!) or until golden brown. Sprinkle with white chocolate chips and bake for an additional 1-2 minutes to melt the chocolate. Immediately spread the melted white chocolate evenly over the top of the cookie base. Sprinkle the animal crackers, M & M's and sprinkles evenly over the top and press down lightly.

Refrigerate for 1-2 hours until chocolate has hardened. Remove from foil pan and break into pieces.


This plate of yummy looking Spring Cookie Bark will be presented to the guests at Impact Theatre ( a community theater that my husband and I run...click on it if you want to read about it!) tomorrow night with all the other homemade desserts the faithful bakers make for each event.
