Who Does Your Future Belong To?

Hello hello! Greetings with another post–a much anticipated one at that. I haven’t been on the computer much lately, but you know what means. I’m brimming with things to share!

Lately I’ve been feeling like my pumpkin kabocha has turned into a carriage.

I’ll explain what I mean later…

Because a steamed carriage just doesn’t make sense, but it definitely tastes good!

I steamed it with thyme, and ground all-spice. I didn’t know that you could steam herbs! I guess in reality, you can really steam anything, even nuts.

This may explain why my palms and the bottoms of my feet are rosy.

I was inspired by Averie’s sweet-and-sour honey lemon tofu. However, instead of baking the tofu I fried it, but I followed her cue and used mango chutney and lemon. I sprinkled on some sesame seeds and cilantro for the final touch.

A great idea!

I took Mel’s advice on spreading Nutella on the brötchen. Although this wasn’t Nutella per se, it was close enough as it was, after-all, chocolate hazelnut butter. This was so delicious and went perfectly together! I decided to simply spread a date on one of the halves.

Alongside came a bowl of Greek yogurt with chia seeds and a medley of fruits.

I think I may be one of the few people who drinks a glass of wine and doesn’t get sleepy, but instead dances their butts off long enough to get some blisters. Anyone care to join me? I guess you don’t have to get blisters though!

I can't believe that this bar tasted like a delicious, fruity wine!

I used a mix of oats, puffed millet, and puffed corn for the grains in this bar. I also added some grated chocolate, dried fruits, pecans, and more mixed nuts to the continuously evolving secret recipe.

And a pick-me up lunch!

I made a sun-dried tomato cauliflower mash, since my mom has never tried this vegetable in that form. Eating anything mashed is such a comfort food for me. Maybe because it’s like baby food… but tastes way better!

I highly recommend this recipe!

I recently received a newsletter from the Vegetarian Times and saw they had a recipe for smoke baby portobello sliders. The picture looked appetizing alone, and I happen to get some portobellos on sale at the market. This was sweet, smoky, juicy, savoury, and just wonderful to bite into. The herbes de Provence gave it a great sweet, flowery, and Italian flavor. I love how portobellos really suck up the flavors of the rubs and marinades because otherwise they would be too earthy for me on it’s own. I actually prefer my mushrooms cooked unless I’m dipping raw ones into hummus or my favorite BBQ sauce. I also suggest that if you try this recipe, use a bread that isn’t whole wheat. Maybe it’s just me, but I can’t imagine these flavors going well with a grainy bread.

I also thought that maybe a smoothie with some leftover pulp from juicing + the usual ingredients would make my lethargy go away.

Unfortunately, I was feeling under the weather pretty much the whole day, until I took an afternoon cat-nap.

Another portobello recipe!

I found a great recipe in the Veganomicon, Portobello Salad with a Spicy Mustard Dressing. This was delicious, and I don’t think I can ever get over how great the texture of this mushroom is.

So this is how my Friday started out...

A nice but very wavey day at the beach--perfect for the surfers!

The waves here are just good for simply riding… unless there’s a hurricane. That’s another story! A lot of people get arrested because they’re not suppose to be out there when the weather is that bad. Their dangerous, but their probably the best that Florida can get!

Then it was time to continue the dancing from the other night!

We went to go see a new talent signed to one my favorite DJ’s (Steve Aoki) label, Dim-Mak records. It was so much fun and so many things went our way that night.

While trying to find parking in South Beach and as soon as I said "someone please pull out just for me".. reverse lights came on and we had a spot!

That’s when I knew that things would go my way. We headed over to this place…

We payed, but then somehow one of the doormen knew we payed called us back and had the cashier give us our money back because “we were with Norman”. Whoever Norman is…(?) thanks! After dancing our feet off we headed back to the car and met a friendly stranger. Actually, at that late hour… almost everyone is friendly. I can’t tell you how many people I walked by that put their hands out for a high-five. I loved it! Anyway, friendly stranger encounter brings me to the next day.

First I had to get refreshed with this perfect summer breakfast.

Somehow I managed to wake up in time for my favorite yoga class.

Overnight oats topped with Cacao Bliss banana "soft-serve", macadamia nut butter, coconut shreds, and sprinkles of course.

After yoga class and lunch, I got ready and dressed!

It’s about time I made a debut with this blouse! Oh my goodness, this top is insanely vibrant and a new favorite. I don’t think I’ve ever gotten so many ooh’s and ahh’s from a single item of clothing. It was funny because at one point when we were heading up to the W Hotel, I saw these women looking at me, and making the motion around the shoulder and literally gasping with a smile. Which makes sense because guess what was going on this past week? Mercedes-Benz Swim Fashion Week! I headed to the W Hotel to catch some of the action.

Of course I brought one of my partners in crime!

As soon as we got there, they generously offered to make us some drinks.

I’m not the biggest fan of tequila, but one of the guys promised that it would be the best tequila I had ever tasted. He was actually right! No foul face was made, and I was happy with my slice of sweet orange dipped in cinnamon to have afterwards. Then a very handsome (that’s an understatement people) gentleman offered to make me another drink. Uh… you had me before hello!

It was a really nice evening, and I got to meet a lot of new people! I think the best part was that it encouraged me even more to pursue my dreams. Whatever it is, whatever I want… I can make it happen! Oh gosh I’m biting my tongue right now because I still have lots to share! Until next post, “Go confidently in the direction of your dreams. Magic in the Kitchen

Hello everybody! Yesterday was a pretty upsetting day for the German team and everyone rooting for them. I was sulking around for awhile, but I decided to bake and my friend came over–Sex and the City marathon! I don’t know what it is about the World Cup, but my heart goes into it. I’m going to be sad once the games are over. Every four years this tournament becomes a big part of my life, and I find that my conversations are about the games or somehow find their way to that topic. Moreover, I loved reading all of your answers on my last post about style. And thank you so much for the compliments! I can tell that one of those shirts is “my new favorite thing”. I also saw that many of you commented on how nice the pictures look. Well, one thing I’ve been taking more into consideration is lighting and composition. The third eye never closes! It’s funny though how these little changes are noticeable. Anyway, here’s some candy for your eyes!

Vanilla Macaroon Granola... you are so good to me!

When I was at the bulk bins the other day I went over the granola selection to see if I spied anything new and interesting. Then I saw the words “vanilla macaroon” and I nibbled on a bit to see if I approved. Yes, very much so! Oh! And those little raspberries came from our garden. It was so exciting to see that our plant was finally producing fruit.

This is something I definitely have to make again!

This was a spicy curried sweet potato and tofu dish. I sautéed some onions, then fried the baked sweet potato and tofu in coconut oil with some freshly ground spices and curry leaves. Next, I added the spicy coconut milk mixture I made and let everything absorb it. Towards the end was when I added the spinach till it wilted, salted to my liking, and sprinkled some toasted coconut shreds on top. Voila!

Something else orange in my life, recently!

When I was at the market the other day I spotted a kabocha! I haven’t seen one or had one in months. Maybe even since last year? Anyway, I was so excited that I practically hugged it in my arms instead of simply putting it in the my basket.

I wanted to make something special.

I was inspired by Amanda’s Pumpkin Chili Mexican Scramble recipe. I grinded up some spices often used to make garam masala (as far as flavor goes, grinding spices yourself is the best). I fried the spices first, then I sautéed the onions and garlic. After that I threw in the kabocha with some water and let that cook. Once I could stick a fork in the cubes and the water was absorbed, I threw in diced red and yellow bell peppers.

What could this be?

On the side I mixed together a “scramble” concoction with: tofu, garlic powder, onion powder, soy sauce, nutritional yeast, turmeric, and black beans. That mix went into the pan as well with some coconut oil. I had almost forgotten the two ingredients I definitely wanted to use for this dish–hickory smoke and vegan worcestershire sauce. The deal was pretty much sealed by then and I knew I was going to be serving a delicious Friday night dinner to my family.

For the finishing touches I threw in a diced tomato, cilantro, crumbled corn chips, avocado, and cottage cheese (you could use sour cream, but I didn’t have any on hand). Magic in the kitchen! And now for some more magic…

I used the banana bread recipe from the "Veganomicon" to make muffins instead.

I changed the recipe a bit by using coconut oil instead of vegetable oil, and using half rye flour and half whole wheat. I love the flavor coconut oil lends, and I wanted to see how baking muffins with it would turn out. Scrumptious, delicious, and it reminded me a bit of Lebkuchen because of the rye. I have some more recipes in mind using rye. They taste so yummy plain, with coconut oil, peanut butter, ghee, and…

I’ve been putting chia seeds in my breakfasts every morning now, and I also got a new protein powder: Jay Robb’s vanilla rice protein. I just wish it weren’t so pricey! I tried a few to see which one I liked the most. I’ve come to realize that there’s no escaping the slight texture change that a lot of plant-based protein powders give. Also, notice the different colors? When you can’t choose, just choose them all! I went ahead with pumpkin seed butter, peanut butter, and Cacao Bliss to top the melting banana soft-serve.

I cant tell that these muffins will be frequenting my breakfasts.

This time I used a variety of nuts: pistachios, cashews, hazelnuts, walnuts, and almonds. For the dried fruits I used banana chips, dates, and dried cranberries. Of course the usual coconut shreds went in the mix. I also added some honey. Other than that I kept the recipe the same pretty much since I liked how my second batch turned out. I plan on going to the store and getting some chocolate chips and who knows what else!

Oops these got a bit burned, but they taste good anyway.

Perfect for snacking on-the-go

My mom has been loving the weekly batches I’ve been baking.

The other day when me and my dad went shopping we stopped by the Lindt store.

It’s great because it’s basically like a buffet of chocolates. You can choose from all of their Lindor truffles and European specialities, then just pay by the weight. Not to mention they were having a sale going on–10 bars for $15! I chose their Tiramisu petits desserts, and the dark chocolate Mozartkugel. On the topic of sweetness, how about I leave you off with this one… tomorrow is Friday!!!

I Can Almost See Clearly

So ladies and gentlemen, this chicka completed a philosophy exam today that took over 7 hours. Whoa mama! I just have to finish up an essay and then I’m done. Finito.

But let’s begin!

Oh how I love thee homemade granola!

I loosely followed this recipe by using things I had on hand, and instead I did half maple syrup and half apple-maple syrup. I also added in some coconut extract, raisins, sultanas aka golden raisins, white chocolate chips, and shredded coconut. Note for next time: bake at a lower temperature. Also, I loved the mix pre-baking as well! Seriously though, one of my favorite combinations during the warmer months is granola + Greek yogurt. And there’s something extra satisfying about having granola you made yourself. Doesn’t that go with everything?

Starting off the day by choosing a cute outfit!

I had my last Amy's Texas burger alongside some sweet potato wedges.

For the sweet potato wedges I just cut up two potatoes, tossed them in canola oil, then doused them with Old Bay Seasoning. Then I baked them in the oven till they were done.

I also got to try out something new!

The people over at Bone Suckin’ Sauce contacted me after seeing my love for their BBQ sauce. I had never tried their mustard so they sent me a package with a jar of their sweet hot variation and their classic mustard. I had no idea that they had all these other products like salsas, teriyaki sauces, seasonings, and rubs.

The sweet hot was definitely hot with a hint of sweetness. The classic flavor was similar but not as hot. At first I was thrown off by the color, but not to fear because all of their sauces are all natural. And if you like thick sauces then this is great! Since I don’t eat things with bones in them I’ll just say that these mustards were “finger lickin’ good” just like the BBQ sauce.

Let’s rewind to last Friday. Since it was the first Friday of the month that meant that Richmond’s monthly art walk was taking place. I love it because not only do you get to check out galleries, but I’m always bumping into friends, vendors, and good food.

They bring the farm to you!

I talked to Mark, the guy who helped start Farm to Family about a few things. One of the things he mentioned was their plan: they want to make a documentary of a year they’re going to live off what the things they sell on the bus. Not only do they sell produce, but cheese, eggs, milk, and meats as well. They want to emphasize that a person can live healthily off of local, sustainable, and seasonable foods. They’ll be doing monthly doctor check-ups to make sure they’re in tip-top condition. He also said that this is open to anyone else who is up for the challenge. Not only would it be an experience, but you also get to write a chapter in the book with your personal account. They plan on starting next month and I wish them the best of luck!

No complaints because the food, the service, the atmosphere, and the company was amazing!

The thing I love about eating out with people I'm close to is that I know that nobody minds sharing.

I just ordered the mulligatawny soup since I already had dinner and some snacks not too long beforehand.

Eventually we had to move inside because there was a drunk guy with a knife standing right behind me and he wanted to start a fight with some random guy. Luckily, the man was arrested. I guess he forgot the school’s police station was right across the street. After this meal we dubbed this the new place to go eat and then Cous Cous as the bar we frequent, since we headed over there afterwards.

Now remember how I left off my last post with a see you later to Matilda? Well here are a few things in my life that have made it more bearable. I know I may sound like a crazy dog lady, but I just love her! Everytime I walk into my bedroom I’m expecting to see her lounging around on my armchair.

One of my old professors/friends has been needing some extra helping hands to make things for her fashion line, Thief & Bandit. Also, she recently had the most adorable son! She was so nice to offer tea, coconut macaroons, and I just loved the smell of toasting raisin bread wafting through the air as we worked. She’s actually going to be featured on Etsy’s front page so definitely keep an eye out for her!

Two of the Sweetest Things in Life: Friends & Family

Why hello there! Let me start off by saying that I was touched by the responses I got on my last post. And I am glad that it was just what some of you needed to read. Never leave a friend hangin’!

In my review of Farm Rich’s product I mentioned how they were a bit pricey. Well it was brought to my attention that you can print out a coupon right over here!

My dad has been in town this week and he brought up a couple of papayas from their tree!

Speaking of my dad, we've had a few picnics over the week.

It’s been really nice to have him here and to just enjoy the nice weather. We would meet up at Capitol Hill, where we’ve had many picnics before, and just sit under a tree and hang out.

My dad also brought up turmeric fingers, and they stained my own!

I grated the turmeric into the spiced red lentils while they were cooking and it made such a noticeable difference!

I served the lentils with coconut oil (of course), basmati rice, and steamed broccoli spritzed with Bragg’s.

Later that day I met up with some of my ladies at Ipanema's sister restaurant, Garnett's.

It reminded me of a charming country kitchen.

We wanted dessert, but the baked goods that day didn't sound too appealing to us. We just talked and ordered coffee and tea instead.

Then we took a hop and a skip over to Ipanema in hopes of finding yummy desserts.

The great thing about these two places is that their dessert menu pretty much changes daily. They’ve got staples like brownies a la mode, but their pies, cakes, and other desserts are different each day. Not to mention they also have gluten-free and vegan options as well.

One friend got the maple creme brulee.

My other friend ordered the mixed berry pie a la mode.

And I got the vegan apricot almond bar a la mode.

All of these were so incredibly delicious and huge oh my gosh. Perfect! But was there ever any doubt? This place always impresses with its desserts. Later on we found out that they actually make their own soy ice cream as well! It was also nice to bump into a friend of mine who works in the kitchen. I always ask him for his recommendations.

After dessert we wanted de-stress from all the school and life responsibilities so we went dancing for a bit. Much needed! I love these ladies to death and I felt complete after hanging out with them.

I'm going to be honest I was a little hesitant to share these muffins with all of you because they look funny...

But they taste yummy and I wanted to use the last my hemp protein powder so I made these muffins following a basic muffin recipe. I also opted for coconut extract instead of vanilla, filled some with Cacao Bliss or pumpkin seed butter, and sprinkled on some coconut shreds and chocolate coconut sprinkles. These are perfect as part of a quick snack.

Matilda is now in Florida staying with my family since I’ll be going to New York soon in a couple of weeks. I won’t be staying for too long, but unfortunately I can’t take her with me since I’ll be flying from New York to Florida. Three weeks without my baby!!! I need distractions. I hope everyone is enjoying their weekend! And all the mommies in the world better be feelin’ the love!

Happy middle of the week everybody! Isn’t it funny how time just seems to fly by once Wednesday rolls around? You know what else has been rolling around besides the days? I noticed on some blogs that there has been this incredible message being spread. Recently, I’ve come across some incredible posts that just really resonated with me. Rebekah gave us a piece of her mind last week, Jessica is stepping a foot forward towards some wonderful changes, and Jenny has been posting a great series of LIFT posts. I find most blogs to be really inspiring and I love how they are glimpses of how wonderful some people in this world can be! I’m definitely a person who sees the goodness in everyone. What can I say? Anyway, a lot of posts that have been floating around recently have provoked my thoughts–in a good way. Recently, I’ve been thinking about acceptance, willpower, and rooting for yourself. I’ve had my fair share of of Chicken Soup for Whatever Soul moments in my life, but I’m still standing… with both feet on the ground. There were times when I did fall. In fact there were times I hit rock bottom. But who hasn’t? During those times it was hard to see or even fathom the idea that things would get better. I was blind to the fact that things could get better, but it was up to me. Of course, the love from friends and family helps, but at the end of the day… it’s only you that sees the world through your set of eyes. For the most part, we know what things are best for us. So why is it that sometimes we don’t do those things? Sometimes we do the complete opposite! Looking back on the times I hit the pavement hard, I am astounded by the wasted energy I put into not doing what I knew would help me. It was almost as if I wanted to stay in the black hole because at the time it just seemed like “too much” to deal with. Well guess what? One miserable day I was sitting down and I looked at the people around me. I thought to myself, “I want that. I want to be free like they are and not worry about these things anymore. I deserve to be happy!” I was right! We all deserve that. Eventually, I started taking steps towards getting my spirit back. I knew I was not the empty shell I decided to make my home a couple years back. At first, everything felt so scary and foreign to me, but overtime I saw that the more I did these things that were actually good for me, the easier they became. And eventually, it felt natural. I didn’t even think twice about it! I was starting to see that I should have more compassion towards myself, which led to self-acceptance. By working through the storm, I am now able to appreciate so many aspects of life, this world, and beyond. Maybe the child inside of me will never die. I really don’t mind seeing the world through the same set of wide eyes for the rest of my life. I believe people can still keep that innocence and simultaneously learn from their “mistakes”. Just live and let go. Anyway, you see, after you’ve picked yourself up, brushed off your knees… that’s when you realize that scrapes and bruises are only temporary, and that aching hearts do heal. But it’s up to you! And you’re wonderful.

Remember how I said that I wasn’t too keen on the taste of pumpkin seed butter? Well that was the case until I tried the Futter’s pumpkin seed butter that Liz sent me. Whoa! Second chances can be a good thing. I also love the color–it makes me feel like a kid again. Remember when they came out with green ketchup? Green eggs and ham? But of course there are foods that are normally green… like beautiful artichokes!

Guess what this is!

When the lovely Katie posted a recipe for a breakfast pizzert (pizza + dessert), I bookmarked it right away! Since I didn’t have pastry flour I opted for a mix of corn meal and whole wheat flour. I wanted to make something reminiscent of a shortcake, so strawberries were obvious. I plan on making another one soon and I know the perfect fruit to use for the corn meal and whole wheat flour combo. You’ll just have to wait and see!

I've also recently whipped up my own batch of refried beans!

I spiced mine up with some freshly ground up dried chipotle peppers. Also since I didn’t have any avocados on hand I opted for something I did have: avocado oil! I “borrowed” this from my parents’ kitchen, and have just decided that I’m never giving it back! Sorry guys, but atleast you’re always loaded with actual avocados (avocados are so cheap in Florida).

We now interrupt this post with some fashion!

Perfect for OIBAJ (oats in a BIG ASS jar)

The other day when I was putting some burnt coconut butter on my sweet potato I realized that it was that time again! This time I did things differently. I made my bowl of oatmeal the night before so they would cool down–as I’ve shared before I tend to start sweating like a mad man when the weather gets hot and I have warm oatmeal–and I mixed in the protein powder after I cooked the oatmeal. Anyway, in the morning I mixed in the oats with the coconut butter little by little. I also  sliced a banana and mango in there, and then topped it all with some shredded coconut. This was the perhaps the creamiest oatmeal breakfast I’ve ever had! No lie! On that note, I’ll leave you all with my last piece of this semester for my advanced sculpture class.

Just Checking In

Oh hi, excuse me as I am typing this while I’m underneath a pile of wood, textbooks, novels, and more paper! Remember me? It’s only been a week since my last post but so much has been going on. Lots of getting down and dirty at the studio! I can’t wait to show you all my final piece. My critique is on Monday so it’s coming up soon! I’m actually going to start filming the video piece for my structure tomorrow. Anywho, on with the show!

Thank you all for the compliments on my outfit! A couple of you asked where I got the skirt from, and Holly you guessed it! Anthropologie of course! Am I that predictable? Hehehe. Also the backpack was a gift from my grandparents from a random street market down in Colombia.

A necklace I permanently borrowed from my mom!

This woman she knows actually makes jewelry and this is one of her pieces and there’s a matching bracelet as well. I just realized that in the picture of me dancing below I’m wearing another necklace the woman made. I love how they’re eye-catching but fun at the same time.

Oh! And a little tip for OIAJ: I like to bust out the jar when I have what my eye says is about 2-3 tbl of the nut butter left. I also cook my oats separately and stir it in little by little so the nut butter gets mixed in really well!

I forgot to mention that a couple weekends ago I let my inner dancing queen out and ended up with wet, sweaty shoes!

Now on to some eats from these past couple of weeks. Randomness commence!

Ohhh yes!

While I was visiting my soul sista’, Liz, I saw she had an amazing assortment of nut butters to choose from. Her favorite brand is Futters’, can’t you tell? I loved these so much and she was kind enough to ship them to me! Complete with a super sweet card that’s sitting on my kitchen counter that I see every morning. Having meaningful reminders of my friends (especially the ones that are far away) always comfort me.

I like to cut my toast in half so I can try more spreads such as : butter, butter + marmalade, chocolate pecan butter, chocolate pecan butter + Mymoune’s Crème of Dates with Almonds.

Since the weather has been sunny I felt like making one of my favorite chickpea recipes!

I followed smitten kitchen’s chana masala recipe and served it on top of some basmati rice + coconut oil. I love the fragrance basmati rice gives off when it’s cooking.

I had a frozen chickpea cutlet I made awhile back and it came in handy!

This doesn't even look like chickpeas have anything to do with it!

But they most definitely do. I stumbled across a beet hummus recipe not too long ago. I love beets, so naturally I gave this a try. Note: this was so so so good with Dr. Kracker’s apple crisps.

Oh Happy Day

Before I say anything in this post I just want to give a warm welcome to some new readers! I am so glad that you all have found my blog and may it bring a smile to your face. So if you’re a reader and haven’t said hello, please don’t be shy. I love discovering new blogs and learning more about all the interesting folks out there! So let’s all dive right in, shall we?

Leftover pasta + manchego

Now that we’re on the topic of chocolate, and I happen to be sitting on a throne made of decadent chocolate, it’s only natural to share!

3400 Phinney Hazelnut Crunch

Wow! Can’t quite recall when the last time was that I bit into a milk chocolate bar with such a great flavor. The crunchy hazelnut, the sweet milky chocolate, and the subtle salty twist won me over with the first bite.

Wonderfully complex. The curry flavor wasn’t just from the curry powder, but rather a blend of coriander, turmeric, mustard, cumin, fenugreek, paprika, red pepper, cardamom, nutmeg, cinnamon, and cloves. So you can imagine…

More leftovers!

It’s amazing what one can do with leftovers. I used the rest of the angel hair pasta for this dish. I sauteed some mushrooms with onions and then simmered them in a tomato sauce with balsamic vinegar. Using the rest of the sage and pumpkin seed crust mix I made awhile ago, I dredged some tofu in it and baked it till it was nice and crispy on the outside. I also tossed in some pine nuts and the very very last of the sage and pumpkin seed mix.

Now I ALWAYS pack snacks for on-the-go, because you never know when hunger may strike!

I only have one bean burger left! This one I had with roasted red pepper, onions, ketchup, cilantro, pepper jelly, and melted manchego.

I got home from my night class and I just wanted something comforting so I made a cup of hot cocoa with creamy, thick almond milk.

I made a sandwich on this delicious bread (has dried cranberries, sprouted grains, and various nuts and seeds). I filled it with melted manchego, pepper jelly, roasted red pepper, onions, and sweet basil. I also decided to sprinkle on some nutritional yeast on the kale.

Then it was time to take my dad to airport.

I came home, relaxed, and got ready for a date!

We went to his favorite place... a little Vietnamese restaurant.

I’m usually not a fan of brothy soups, I prefer thick purees. I tried his soup though and I would definitely order it for myself next time I go there. I thought it was really cool that the plate full of herbs, sprouts, and lime wedges were to rip apart and put in the soup; as much or as little as you’d like because not everyone’s tastes are the same.

I ordered fried tofu in a sweet and spicy lemongrass sauce with steamed rice.

The place may seem like a hole in a wall, but lots of times those restaurants have the best food! There’s a place down the street actually that serves Korean food and I swear the owner is a mother to everyone. If you’re sick she’ll give you extra helpings. These places seem so cozy that you could eat there alone and just hang out for hours. As for the date, it went well, but no romantic sparks. However, I’m going to keep hanging out with him because I think he’s a good friend and you never know what could happen!

Tiramisu for breakfast anyone?

I tried to recreate one of my favorite desserts in oatmeal form after seeing all of Katie’s creative recipes on her blog. Seriously, this little lady is endlessly creative and she has so much positive energy I can feel it through her words! I cooked my oatmeal in chocolate protein powder and instant coffee. Since I didn’t have mascarpone I subbed in some cream cheese, and added that while the oats were cooking. I topped it with coconut butter, more coffee granules, and a lady finger. Not quite like tiramisu but definitely reminiscent; delicious nonetheless!

On this sunny and re-energizing day I decided to tackle some recipes I had been eyeing for quite some time.

Those recipes, my dears, come straight from The Conscious Cook. I took a break from this book for awhile because I missed making up my own things.

Tomato bisque--another recipe of Chef Tal's that calls for cashew cream.

And focaccia with caramelized onions.

For the focaccia I opted to do 50/50 unbleached all-purpose flour and whole wheat. The dough ended up being enough for two large loaves. One for me and one for my roommate! Might I also add… I’m just going to say it flat out: this was my favorite meal all week and I don’t think anything can top it. Nope, can’t even try. The tomato soup was thick and full of flavors from the herbs and bay leaf it simmered with. I ripped off another piece of the bread to scoop up the very last drops of my soup. Foodgasm at it’s finest. And a pat on the back for me… on both sides! Seriously, I’ve forgotten how amazing and satisfying homemade bread is. As I was kneading it, I was reminded of how much fun the process is.

Her message really resonated with me and I felt it throughout the whole day as the sun was giving off it’s glorious and comforting rays. Wow, it’s not even Friday and I’m already celebrating! I hope you’re all in the same boat. Where should we sail?

Making Up For Not Having a White Christmas

So my friends and I decided it would be safer not to drive out to Charlottesville for the weekend. I’m glad we didn’t go because they predicted 3 ft of snow for that area. I’m not sure how much they ended up getting though.

I have never tried any of the PB&Co flavors but I’d imagine it would taste similar to this. In the bowl I cooked some oatmeal with the last of my chocolate protein powder + cinnamon + coconut oil. Then I added in some diced apples, white chocolate chips, and crunchy peanut butter. So delicious!

I made a bowl of chocolate oats with a banana bruleed in + coconut oil + peanut butter + white chocolate chips. Obviously I loved the peanut butter and white chocolate chip combo from earlier that day.

Steamed kale later massaged in olive oil; To go with the brie I made a caramelized onion-cranberry compote + pine nuts for crunch and earthiness, then I baked some leftover Italian semolina bread. Even the kale with the brie and compote tasted delicious together.

When a friend of mine slept over, we opened up my box of Kashi GoLean Crunch that had been sitting in my pantry for ages--this became part of my snack pictured above.

This snack bowl consisted of Kashi GoLean Crunch + a crumbled Cinnamon Raisin gnufoods bars + almond milk + coconut oil (all warmed up).

Then it was crafting time for me!

I tried another flavor of the 3400 Phinney bars.

It had a delicious bold bitterness to it at the end and a nice crunch from the nibs.

Another new flavor I tried!

I tried the breakfast Sunshine burger. It was yummy but I don’t think I’ll be buying it again. It’s not horrible by any means, there are just other flavors I prefer; like the Southwest and Original (m’mm good). In the bowl is a recipe I got from a Mambo Sprouts newsletter: sweet and tangy mashed butternut squash. I just realized that I forgot the chives! Oh well.

While I was snowed in I took a detox bath and quenched my thirst with something I spotted at the store--mango flavored coconut water!

A recipe I wrote down ages ago and found the other day--smudges and all.

This was suppose to be a Jamaican inspired oatmeal recipe actually, but since I ran out of oats the day before (GASP) I did the next best thing–granola! I opted for Udi’s Au Naturel flavor over yogurt. They were topped with pineapple bits, a sliced banana, coconut shreds, almonds, and maple syrup (the one my friend got for me on her trip to Canada–peeking in on the left side). I loved every tropical bite of this; especially because I am ready for warm weather!

On that same page I wrote down some other recipes and decided to make another one for lunch.

Chickpeas in coconut milk + steamed kale + coconut & cinnamon rice (with coconut oil)

Chickpeas in Coconut Milk: serves 4

Ingredients

1 cup water

10 oz potato, cubed

14 oz cooked chickpeas

1 generous cup coconut milk

1 tsp salt

2 tbl sunflower oil

4 garlic cloves, crushed

2 tsp coriander

1/2 tsp turmeric

1/2-1 tsp chili

lemon juice

Suggestions for serving: naan or rice

1. Pour water into a medium saucepan and bring to a boil. Add cubed potatoes, reduce the heat to low and cook covered for 6-7 minutes. Add chickpeas and cook uncovered for 3-4 minutes. Add coconut milk and salt and slow simmer.

2. Heat oil, low heat. Add garlic and cook, stirring frequently. Add coriander, turmeric, chili, and cook 25-30 seconds.

3. Mix into chickpea mixture. Stir in lemon juice.

Quick dinner after a long day of errands.

After spending the afternoon with my roommate stocking up on goods at Target, Trader Joe’s and Whole Foods I was ready for dinner despite my snacks and yummy sampling! I bought some buns so I could enjoy Angharad’s spicy black bean burgers in burger form. These keep getting better and better! I topped it with vegan mayo, pepper jelly, melted manchego, yellow onions, cilantro, and ketchup. Holy delcious. I also had some steamed kale massaged in olive oil + cashews for crunch. I highly recommend making these burgers. Not only are they delicious, but they are so convenient for when you’re in a time crunch or don’t have the energy to prepare something. Actually, they’re wonderful for any occassion!

Comfort food with a twist...

This was such a great nighttime snack! Now what exactly was this snack? Well I cooked some cream of wheat in almond milk (I used Almond Breeze Original), and topped it with chopped dates, Artisana’s Cacao Bliss, and my favorite peanut butter. All of this melted together. So soothing and perfect for a Sunday night and some reading.

If all Mondays started like this... well then no one would be complaining!

Liz sent me a recipe that I knew I had to make ASAP! I had some leftover coconut milk from the soup I made the day before; Purrrfect for Indian spiced oats with coconut milk. Early classes on Monday = quick breakfasts so I used a packet of Uncle Sam Cinnamon Raisin Oatmeal + Soymilk. I threw in a handful more of oats in there + extra spices. For the finishing touches I swirled in some coconut oil + raisins + sliced almonds + coconut milk.

Can't get enough of the spicy black bean burgers!

I prepped it the same way as Sunday night only this time I had it with barbeque Popchips (better the second time around), and a Bugs Bunny carrot + my favorite peanut butter. Once again, this was quick enough for me to put together without eating my own arm off. For some reason I didn’t realize that my Seminar on Hinduism class ended at 6:40–not 5:40. It didn’t help that my afternoon snack sadly only held me over about an hour and I hadn’t anticipated being hungry that quickly. Apparently today was one of those bottomless pit days and the only thing I had packed was the 3400 Phinney Nib Brittle bar and that didn’t do much except please my tastebuds. Note to self: always keep something substantial packed. I’m usually good about this is if I know I’m going to be on the go, but today I had the leisure of snacking at home. Oh well, lesson learned.

Hope You Had Yourself a Merry Little Christmas Part II

Hold on to your seats ladies and gentlemen we’re blasting back a little bit further into the past!

Granola girl is back!

I had this bowl of Udi’s Au Naturel granola with the apple grahams Holly sent me, spiced applesauce, Sunland’s caramel peanut butter, and vanilla yogurt. This granola is really good if you want to keep it simple or basically, it would go well with anything! The Au Naturel flavor is basically a wildflower honey sweetened granola.

Looks like I couldn't help but take a bite of the tortilla before I took the picture!

I just stuffed it with black beans, peach salsa, sour cream, nutritional yeast, and cilantro.

Whoa mama!

I hadn’t had banana soft-serve in forever! Size does matter when it comes to this – the bigger the banana the better (you get more)!! My toppings: coconut milk, Artisana Cacao Bliss, and Bekah’s scented almonds. YUM to the 10th degree!!! I’m talking love in exponential amounts.

Have any of you guys ever taken or heard of Zumba? Well this is a dance class I go to whenever I’m down in Florida. My mother and I love to dance and all of those classes have so much energy and happiness from everyone that you can’t help but have fun. There are even some professional ballroom dancers that attend the class. Everyone in that class just lets loose and gets down. For real!

After the dance class my best friend came over and Matilda got some presents! But I guess she really liked the necklace I got.

I tried Udi’s Muesli that morning – muesli is one of my mom’s favorite breakfasts. This was a really good muesli!!! There were lots of dried fruits – which I find to be lacking in a lot of pre-packaged cereals.

Agave-Lime Grilled Tofu with Asian Slaw and Mashed Sweet Potatoes

Another recipe from ‘The Conscious Cook’. The best mashed sweet potatoes ever!!! You mash it with a cashew cream, butter, and chipotle pepper. Everything in this dish was incredible and complimentary to each other. I love when a meal touches so many different kinds of flavors. This took my taste buds on a delicious ride.

Pistachios

My dad came home form the store with a container of pistachios! I love these nuts, especially with dried cranberries and golden raisins. I really want to make a pistachio butter. Has anyone tried pistachio butter? Do you like it?

And I FINALLY wore the shorts my mom got me on her trip to Germany.

They gave me two coffees but I had only ordered one! Maybe I should've played the lottery that day.

Later on we went to Target and they had me try on the new Rodarte dresses. I didn’t know Target had such cute things!!!

Tempeh Creole

Dinner that night was something special. I made another recipe from ‘The Conscious Cook’. I love the variety of flavors this book has. I usually stick to using the same spices and seasoning when I cook, but this was different from what I usually use. I served it over some brown basmati rice and with a colorful pepper medley on the side.

Breakfast is a calling!

Looks like I had English muffins for breakfast that morning. One slice with butter and the other with pumpkin butter. I also tried the egg nog flavored yogurt with a lot of cinnamon sprinkled on top. Does that count as “sprinkled” still? It looks like it was actually doused! I also had apple slices with caramel peanut butter = delicious.

I know some of you are always keeping your eyes out for new snack ideas. Well I found one that is not messy and perfect for when you’re on the go! Not to mention it tastes really good. I tried Udi’s granola nuggets! Let me quote them , “Snack-perfect granola chunks made with honey, oats, and lots of nuts.” They contain almonds, cashews, and sunflower seeds. I tried the little nuggets with Wallaby’s Downunder Mango Tangerine flavor.

And now we’re going to blast somewhere else into time.

Personally, I like raw collard greens better than cooked.

I tried cooking them the other day but I wasn’t too keen on the flavor. Anyway, these collard greens made for perfect wraps for the leftover Moroccan stew. There wasn’t much liquid left so I didn’t have to worry about stuff spilling out. I also had some Mestemacher bread with mashed avocado, tomato slices, and horseradish sauce.

We had to use up a bunch of veggies that we had in the fridge so this was a mish-mosh of things! She even cooked daikon radish! I’m not sure what she put in here exactly but I’ll tell you what I do know – besides that it tasted delicious – cauliflower, yellow squash, daikon radish, mushrooms, yellow onion, turmeric, fenugreek, coconut milk, and other things!

Another nighttime snack

A bowl of fruits with coconut milk is something I’ve been eating daily while in Florida. That night I remembered that I still had some Fig Newmans! I love the chewiness of these fig cookies.

So that was the time traveling adventure! Now that we’re all back up to speed, I have a story to share with you all. This was shared with me over Christmas dinner and I thought it was inspirational. They told me about a writer who was diagnosed with cancer but wasn’t going to give up without a fight. So what did they decide to do? They had heard of “laughing clubs” in India and other countries, so they got their wife to go to the library and find a bunch of comedies. Everyday the two would wake up and watch a funny movie. Eventually he was able to cure his cancer with laughter. So never underestimate the power of bursting out in an uncontainable laughter or even just a giggle will do. What’s a miracle you’ve had in your life?

Life is What You Make of It

Hi everyone! I hope your week has started off on a good note. I know mine has. Aside from my computer crashing, things have been looking up. After a week of no sun and dreary weather, the weather gods decided to give us the gift of sunshine and warmth. Thank goodness! I think this is just what I needed to reenergize myself for this busy week. Without my computer I will find myself with less distractions. But I’ll do my best to keep you all updated – hence I am sitting in the toasty Fine Arts building’s computer lab. So many computers buzzing!

I’ll start off with my Saturday night. I was going to go to some experimental sound art show, but I wasn’t really in the mood for that. Instead I called up one of my best friends to see what she was up to.

We ended up going to our friend's house for a house show.

The band seemed to be cooped up in this one room – I think they should’ve played in the middle. But a friend of mine came out of that room with a bloody nose but the biggest smile on her face!

I didn’t want to get back too late because I was planning on going hiking the next day.

So I ended up heading back around 3 in the morning.

Not a bowl of oats!

My tummy wasn’t feeling too well the next day so I wanted to take it easy. I had some leftover okara from when I made soymilk when I got home super late. Yeah, I made soymilk around 3 am… Anyway, I mixed it with pumpkin butter, stevia, and cinnamon. I topped it with a sliced apple, dates, some more pumpkin butter, and the last of the Artisana almond butter.

Aw!!! How can anyone resist?

Some things I packed for my hiking trip!

I made myself a PB&J sandwich using Rudi’s Wheat & Oat bread. Oh my gosh this bread is so good by the way. It’s perfect for sandwiches – especially a classic PB&J. I love how thick the slices make it so much more satisfying to bite into. When I was making my sandwich I had trouble deciding which jam to use. I remembered that Boysenberry jam is one of my favorites, but I currently do not have it in stock.

Well guess what? My computer crashed  and I knew that I would have to take care of that before I went on any hiking trip. And the sun was shining so brightly on Sunday I knew I didn’t want to be indoors.

I headed over to my nearest Apple store and I ended up making an appointment for today (Monday). By the time I was done with that, my friends that were going to go with me either a) didn’t want to anymore or b) didn’t answer. But you know what? I still wanted to go hiking so I went. I called up a good friend of mine that is usually up for doing stuff. I didn’t get to go to the Shenandoah Valley like I had planned, but atleast I got to go exploring and get some easy hiking in.

I love letting Matilda off the leash so she can sniff around as she pleases. She’s so cute because she never strays too far. When she was walking ahead of us she kept stopping and looking back to make sure we were still there. What would she do if we decided to play hide-n-seek with her?

Dinner

This time I just sautéed the kale with white cooking wine and seasonings. I also had some of my leftover “meatloaf” I made with the okara. Last but not least I made a recipe inspired by Katie’s mashed cauliflower. I pureed mine with salt & pepper, nutritional yeast, and soymilk. Then I served it with some all-natural butter. Yum!

Then it was time for some homework!

Monday mornings

This breakfast was interesting. I wanted to use up the rest of my okara, so I mixed it with a ZenSoy banana pudding cup. By the way, I think the banana pudding flavor is my favorite. I heated that up till it liquified and then dumped on some Aztec Crunch Corn & Amaranth cereal. Excuse my half-eaten apple that I enjoyed with my favorite crunchy peanut butter.

I assembled my sandwich the night before because I knew I would be pressed for time today.

I also sautéed some kale with raisins and toasted pine nuts. I love toasted pine nuts!

Le Sandwich

I used two slices of French Meadow Bakery’s Woman’s Bread. What’s so special about Woman’s Bread? According to the site, “with 14 grams of protein and 2.6 mg of soy isoflavones per serving, Women’s Bread contains key nutrients for women’s health. Sprouted grains bursting with vital nutrients and vitamins are easy to digest. Dried cranberries provide an antioxidant boost.” I enjoyed the dried cranberries very much! Okay so what’s in between the bread? Portobello mushrooms, basil, red onion, cream cheese, fakin’ bacon bits, and tomato paste + honey.

After my readings in apocalyptic Literature class I wanted to go exploring around Belle Isle some more. Apparently I just couldn’t get enough and the weather was gorgeous! It was so much fun not knowing where I was going but taking random trails that would lead me to who knows where! Afterwards I came home and showered and did some pampering.

And dinner time rolled around.

I didn’t really feel like cooking tonight. Well, I guess I did cook the cauliflower mash with garlic and herb, but that barely counts! So I just baked some Gardein “chicken” tenders in the oven and seasoned with Old Bay blackened seasoning, and ketchup + curry. Curry ketchup is delicious. All you have to do is mix in some curry powder with ketchup – simple! It reminds me of buying pomme frites on the streets in Germany served with with curry ketchup. Please excuse me toasts for being shy. I promise they are delicious once you meet them. Tonight I wanted to try French Meadow Bakery’s Gluten-Free Multigrain bread. That’s a mouthful! Anyway, the bread was seriously delicious! I just spread on some butter on one slice, and butter and fruit spread on the other. I can’t explain really how tasty this bread was. Just biting into it was awesome and I can’t believe it has no wheat. Can you see the all the little flaxseeds? So good! I highly recommend this bread, even if you don’t have a gluten intolerance.

8. favorite autumn vegetables and ways to eat it? Winter squashes out the wazoo! Recently, I’ve been digging cauliflower and kale

9. hot chocolate, hot cider, coffee or tea? Hot chocolate made with coconut milk. And I love this one tea called Richmond Blend. It’s a black tea with cinnamon, orange peel, and cloves. It’s out of this world and actually has an intense flavor on it’s own. Not to mention the cinnamon helps keep me warm during the cold months.

10. favorite seasonal dessert? I think it’s a tie between double-layer pumpkin cheesecake and sweet potato pie.

Anyway, I just wanted to fill you all in on how my weekend went and how my week started. I’m going to try to keep up with all you lovely people!
