Then, Her Royal Highness 👸🏽 also witnessed the exchange of the Memorandums Of Understanding (MoUs) between the BRICS Women’s Business Alliance, represented by Anna Nesterovas & the National Association of Women Entrepreneurs of Malaysia (NAWEM) represented by Deputy President Saliza Abdullah

This session featured Her Excellency Atifete Jahjaga 🇽🇰👩🏼‍💼, Former President of the Republic of Kosovo, whose historic election as the 1️⃣st woman & youngest head of state in Kosovo at her age of 35 stands as a landmark moment for women’s leadership & democratic transformation. Her Excellency’s presidency was distinguished by an unwavering commitment to building democratic institutions, strengthening the rule of law, advancing human rights & fostering reconciliation in a society emerging from conflict. Beyond her tenure in office, she has continued to play an influential role on the global stage, championing women’s empowerment, peace building, interfaith dialogue & inclusive development as cornerstones of a more just & stable world 🌎

Her Excellency 🇽🇰👩🏼‍💼 has shared that this was her 2️⃣and visit to Malaysia (1️⃣St visit was 🔟 years ago) & then expressed her sincere gratitude 🙏🏻💖 to Malaysia 🇲🇾 for being 1️⃣ of the countries that recognized Kosovo’s independence since 2008 & the continuous supports until today

Her Excellency 🇽🇰👩🏼‍💼 has reflected her extraordinary journey of leadership, offered insights into the resilience, empathy & integrity required to lead a young democracy through pivotal moments. Also shared her vision of how inclusive leadership can break barriers,heal divides & inspire meaningful progress, while highlighted the importance of empowering women 👭🏻👭🏻👭🏻 & youth as active agents of change

Also Her Excellency 🇽🇰👩🏼‍💼 emphasized that her role during her presidency as a servant for her people, nation & country ~ Not herself. It demonstrated how selfless as a leader to ensure those who have suffered most are never left behind. She was grounded in courage, empathy & the conviction to create change even in the hardest of circumstances

This discussion highlighted Kosovo’s strengthened investment climate, ongoing institutional reforms & potential for inclusive, women-led cross-border partnerships

SiennyLovesDrawing 👩🏻 has attended & understand from Her Excellency 🇽🇰👩🏼‍💼 that Kosovo owns low interest rate, young work force, a good road 🛣️ infrastructure, halal certified food chains etc. hence a potential business environment for export internationally

Her Excellency 🇽🇰👩🏼‍💼 welcomes all to travel & visit Kosovo to see in own eyes 👁️👀 how Kosovo are with it’s business potential

At the end of the dialogue, Her Excellency 🇽🇰👩🏼‍💼 shared that she will pass all the business cards received to Kosovo embassy as a starting point to spark any potential B2B opportunities

This timely panel brought together distinguished honourable ministers, ambassadors, members of Parliament & former ministers to examine how governments & institutions can build public trust, foster social equity & lead with integrity in an age of complexity

This session explored how visionary leadership can drive systems change, empower communities & ensure that public institutions remain resilient & responsive. Panellists offered insights on strengthening governance structures, addressing barriers to participation & reimagining leadership for a more inclusive, just & sustainable future

Yeah‼️ SiennyLovesDrawing 👩🏻😃😁 is gonna share about the 6️⃣ top culinary schools came together in a thrilling showdown for the Lambassadors Challenge, a unique competition aimed at showcasing the versatility of Australian lamb in modern cooking cooking 👨🏻‍🍳🧑🏽‍🍳👩🏽‍🍳 inspired by the Ramadan & Hari Raya spirit of celebrations 🌙💚🎉🎊

The event took place recently at the 📍 University of Wollongong, Glenmarie, Shah Alam, Selangor 🏫🎓🇲🇾

Each team was tasked with creating a unique dish of red meat 🥩 that reflects contemporary culinary trends while honouring traditional Ramadan & Hari Raya flavours 🌙💚🎉🎊

They could only select and use up to 12 ingredients to prepare Australian lamb as the focal dish in the sharing platter dish, accompanied by sides like Australian beef 🥩 , vegetables 🥬🍅🥒 , rice 🍚 , noodles 🍝 , etc.

The champion 🏆 of the Lambassador Challenge was Kolej Komuniti Chenderoh, Perak. In the team were culinary students Muhammad Fikri Bin Kamaruzaman & Muhammad Nazhan Bin Noor Hisham. They were mentored by Lambassador Chef Khairul Ashikhin

The champion 🥇team received a cash 💰 prize of RM1️⃣K & a certificate. Their winning entry was Aussie Lamb Stroganoff Asian style (Australian Chilled Lamb Racks) & Duo Beef Buttermilk & Aussie Dendeng (Australian Chilled Beef Striploin)

The 1️⃣st runner-up 🥈 was the team from University of Wollongong Malaysia (UOWM), with culinary students Leong Tze Jian & Caleb Chin Kai Zheng. They were mentored by Lambassador Chef Eric Siew

The team received the cash 💰 prize of RM800 & a certificate. Kambing Salai Masak Lemak Cili Api (Australian Lamb Flap) & Kerutuk Kebabas (Australian Chilled Beef Striploin) were their entry

The 2️⃣nd runner-up 🥉was RichTalents International College, with culinary students Nur Annatasya Saffiya Binti Azizul & Nurul Nusratina Binti Zulkifli. They were mentored by Lambassador Chef Mohd Ridzwan Rasit. The team was awarded RM500 cash 💰 & a certificate

They did well 👍🏻 with their Grilled Aussie Lamb served with Strawberry Sambal Kicap accompanied by Curry Mashed Potato & Sauteed Vegetables (Chilled Australian Lamb Leg Bone-in); and Classic Malay Botok-Botok Aussie Beef with Puff Pastry using Chilled Australian (Chilled Australian Beef Rump Cap)

The theme of the competition was a blend of traditional & modern cooking techniques, with the focus on quality & sustainability

Following these guidelines, the teams were expected to develop 🆕, easy & practical recipes with Australian lamb & beef cuts 🥩 in a family platter serving for busy working parents with children, with lamb as the main dish

The Lambassador Challenge invited teams from prestigious culinary institutions to prepare, cook & market innovative dishes that celebrate the rich flavours of Australian lamb & beef 🥩 Participants had the opportunity to be mentored by Lambassador chefs in the preparation & cooking of the Australian lamb & beef 🥩

Participants not only demonstrated their culinary skills but also learnt valuable cooking techniques, mise en place, planning & strategy to achieve a winning formula while working with the Lambassador Chefs

Judges, including esteemed Lambassador chefs, key opinion leaders & food industry leaders, evaluated the teams based on creativity, presentation, taste, practicality & the effectiveness of their marketing strategy

Professional butchery is not just about cutting meat, it also showcases the butcher’s skill in deboning, breaking down primals into an assortment of cuts like grill or pan steaks 🥩, stir fry strips 🥓, cubes, yakiniku, shabu-shabu 🍲, sukiyaki 🥘, burgers 🍔 & sausage 🌭 making, marination & value-adding 😋🤤

Retail butchers would need to present & display meat attractively in the meat chiller counters, applying price tag 🏷️ labelling, reducing meat wastages, increasing yields & most importantly providing convenience & practical meat products for consumers

For foodservice butchers, there are not many being hired in the hotel industry 🏨 now due to rising costs. However, if a hotel has many restaurants to cater to, the butchers will be required to have skills like meat cutting, deboning, marinating, sausage making, dry aging & preparation for oven roast, grill & creative cooking 🧑🏻‍🍳🔪 The goal is to ensure the meat is cut & prepared for the chefs to cook to precision, tenderness & customers’ satisfaction 👍🏻

These butchery skills were called upon in the Ultimate Young Butchers Competition organised by the Aussie Meat Academy at Culinaire Malaysia 2023

This competition encouraged plus set a benchmark & 🆕 platform to promote the butchery profession, a sense of belonging to professionalism & to support the foodservice & retail industry

Most people may think butchery has ❌ future career path, but this is untrue as many butchers have become Executive Chefs & Store Managers. The butchery skills set is recognisable & the demand for butchers is high ⬆️ especially in the retail industry & neighbouring countries like Singapore 🇸🇬 are constantly sourcing for skilled butchers

There are 24 participants from Malaysia 🇲🇾, Singapore 🇸🇬, Taiwan 🇹🇼 & Vietnam 🇻🇳 in the competition, all of whom have at least 1️⃣ year butchery experience & are aged 38 & below

Part of the competition requires the candidate to demonstrate by breaking up a Primal of an Aussie Lamb & Beef cut into different sub-primal cuts 🥩🥓 & submitting ideas within the given time frame that are applicable to foodservice or/and retail requirements. Participants will also have to cook a western or an Asian main course, to be presented in western style 🍽️😋

From this media attendance, SiennyLovesDrawing 👩🏻👀 has observed how each of the participants carefully prepared their tools, especially knife 🔪 to cut & set up including display tools for this challenge at the hall prior to the exact challenge timing ⏱️

The competition was in 4️⃣ sessions over 2️⃣ days, with the winners disclosed on 22 Sept ie. The last day of FHM 2023 during the FHM Closing dinner 🍽️

The butchery champion Liao Ci-Hong of Yun Chang Beef Restaurant, Taiwan received RM3️⃣K & a trophy 🏆

The 1️⃣st runner-up Lai Chih Lun of Gourmet’s Partner, Taiwan won RM2️⃣K & a trophy 🏆

The 2️⃣nd runner-up Mohd Zamri Bin Mohd Ramli of TFP Retail Sdn Bhd, Malaysia received RM1️⃣K and a trophy 🏆

“The competition is to promote butchery as a profession,” said Rose Yong, Malaysia Country Representative, Meat & Livestock Australia. “It’s a good career, working in big supermarkets & hotels. Some big hotels hire butchers not only to cut meat but also to make sausages, roast meat in a combi oven, do sous vide & smoking.”

Hence the competency, versatility & skills of the butcher are invaluable in the foodservice industry. The competition showcases practical ideas, efficiency & competency as a benchmark for butchers. Following the competition, Meat & Livestock Australia will continue to upgrade butchers’ skills and knowledge with specific training under the Aussie Meat Academy framework

(1) Hazelnut 🌰 Praline

Preparation time: 20mins for 30 pieces

Part 1️⃣ Procedure: Homemade Hazenut 🌰 Praline

Ingredients: Hazelnut whole 200g, sugar 170g, water 50g & Vanilla extract 3g

To cook sugar & water 💦💧 to 120’c
Then, to add in all hazelnuts 🌰, crystallise the sugar

Continue to cook the crystallised hazelnuts 🌰, until caramelised

Only if to make flavour praline, to add in vanilla extract

Part 2️⃣ Procedure: Hazelnut 🌰 Praline

Ingredients: Homemade hazelnut praline 325g, Callebaut Cocoa Butter 32g & Milk Chocolate Callebaut 823NV 33.6% 30g

To warm up praline & milk chocolate 🍫 to 35’c, then to mix in the cocoa butter & blend everything together

Then, to temper until below 25’c & cast into the mould

To set for minimum 4️⃣ hours before dipping

(2) Exotic Caramel

Preparation time: 20mins for 30 pieces

Part1️⃣ Procedure: Exotic filing

Ingredients: Sugar 150g, Anchor extra whip whipping cream 27g, salt 1g, Ravifruit passion fruit puree 55g, Ravifruit mango puree 22.5g, Ravifruit coconut puree & Anchor butter each 37.5g

Pot 1️⃣: To make a caramel with sugar, salt & a little bit of water 💦💧

Pot 2️⃣: To warm up the cream, passion fruit puree, mango puree & coconut 🌴🥥 puree together as liquid mixture

Then, cool down the caramel in liquid mixture, mix well

To wait until the mixture cool down to below 40’c, add in the soft butter & blend together

Part 2️⃣ Procedure: Caramel Ganache

Ingredients: Sugar 75g, Anchor extra whip whipping cream 187.5g, Glucose 7.5g, Anchor butter 47.5g, sea salt 3g, Milk Chocolate Callebaut 823NV 33.6% & Callebaut Dark Chocolate Santogo each 125g

To make caramel with sugar, glucose & a little bit of water 💦💧

To add in the warm cream when the caramel reach the stage require (chef 👨🏻‍🍳 guidance refers)
To blend in the butter & salt, pour into the dark & milk chocolate 🍫

To make an emulsion & pour inside the ring prepared

SiennyLovesDrawing 👩🏻 got not much 🤔 chocolate 🍫 making experience, this was her 1️⃣st time, however she enjoyed & learnt slowly with the chef 👨🏻‍🍳 The chef 👨🏻‍🍳 went slowly in explaining the theories & demonstrated the hands 🤲🏻 on skills during the class. She loves the small class size (🔟pax) & chef 👨🏻‍🍳 gave attention & guidance to each participants accordingly
