My 1st Thanksgiving Bird!

I'm still a month behind on these posts...sorry!
So my thoughtful sister-in-law Melanie took a picture of my 1st Thanksgiving bird. I've been married to Scott 10 years and this was the 1st year I had the pleasure of hosting Thanksgiving. It was so fun! There was so much yummy food and his most of his family attended.
Anyway back to the bird...I am one of those people who when given an assignment (or voluteer), puts way more work into something than needed. It's a bad thing sometimes. So for Thanksgiving I volunteered to make the turkey and the stuffing. And since everyone told me it was such a wonderfully yummy bird I thought I'd share my recipe and method.
PREPARING THE TURKEY...I researched for about a week on the best way to prepare a turkey. I finally decided after viewing Alton Brown's video (foodnetwork.com), that brining was the way to go. So....Scott's brother Eric brought me the free 21lb. bird the day before Thanksgiving. I spent the rest of that day thawing that sucker out in my kitchen sink, replacing the cold water every 30 minutes for 10 hours. I didn't want to chance anyone getting sick! After the turkey was thawed, I brined it. The brine was made up of 8 cans of vegetable stock, whole allspice berries, candied ginger, brown sugar & salt. I think I'm forgetting another spice. Anyway you boil all that and then let it cool and you've got your brine. So I put the brine and a ton of ice in a huge 10-15 gallon bucket and then put in the bird. The whole thing was submerged. Half way through you're supposed to flip the bird over in the brine. Oh and you're also supposed to set the bucket in a cool place which happened to be outside. So at 2am on Thanksgiving morning I woke up and went outside in the freezing AZ cold and flipped the cold wet turkey over. The next day I pulled the bird out of the bucket, patted it dry and rubbed canola oil all over the top of the bird. I then put my fancy new internal thermometer into the deepest part of it's breast.
COOKING THE TURKEY...Next (and this was probably pretty important) was how to cook it. Alton Brown, who in my opinion is pretty darn smart when it comes to cooking, said that you never want to cook the bird first and then brown at the end. All the yummy bird juices and fat from the skin will just melt during cooking and slide down the bird to the bottom of the pan. Instead he suggests putting the bird in a 500 degree oven uncovered for 30 minutes. This browns the bird first. Then you cover the breast with foil and cook the rest of the bird at 350 until it reaches an internal temp of 165. So there you go! It came out great and was very juicy. That's what the brining thing is all about. Infusing flavor into the bird and creating a moist, juicy turkey that won't dry out. Supposedly the leftovers are still just as juicy and tasty the next day but we didn't have any leftovers!

Halloween (a little late I know)
I had to download a new browser for my computer in order to become a serious blogger. My mac which I love was having some internet issues. It's all better now and lucky for you I can now proceed to post a ton of not very well taken photos. Here it goes...Halloween was fun this year. We had our annual Halloween party at Mark & Lisa's house. Lisa is my husband's younger sister. Anyway, they go ALL OUT. Check out their homemade punch bowl. Kaycie was not a fan of their house that night. Here is a picture of her absolutely terrified and shaking after seeing her Uncle Eric in a freaky costume. He had to take it off and hide it out of site after that. So to the costumes...all of our family except Ty were ASU fans. Scott actually had an ASU game to go to that night so it worked out well. Ty insisted on being a skeleton though. Lisa also had a Napoleon Dynamite wig and we wanted to try it on Ty since he also has curly red hair. He was not happy but he wanted the dollar she bribed him with. Poor Ty. It was a good laugh though.

Watch Out...Virgin Blogger
Okay, so my sister talked me into starting a blog. This is not my thing. I explained to her that I'm not funny and my life is boring so why would people want to see this? Also ignore any bad punctuation (mom). So here is what my first and probably most blogs will sound like...today I woke up, fed kids, worked, took Ty to school, put Kaycie down for a nap, worked some more, made dinner, worked some more, put kids to bed and finally worked some more. Nice I know. Actually, today we picked up a kitchen set I bought on ebay for Kaycie. Definitely the most exciting part of this day. Is this what blogging is supposed to be like?
In all seriousness, our family does have some exciting stuff going on. We currently live in Buckeye, AZ. Where is that you say? If you're familiar with the vastness that is now the Phoenix area, we are the very last town you'll pass west on your way to California. Scott is in the process of building his own dental practice in the west valley (phx, az). It's called Estrella Mountain Dentistry. The logo is done and the architectural drawings are done. Next is bids from contractors. I'm actually really excited to decorate his digs. It cannot come too soon for him either. That also means a light at the end of the tunnel for me. 10 years of doing what I do has me burned out. Graphic design is great and all but the multiple deadlines + kids = many levels of stress.
Ty is in preschool right now since he barely missed the kindergarten cut-off this year. He loves it. He has a little group of buddies that he looks forward to seeing. Kaycie is jealous and wants to go to school too. I'm serving in the Young Women's group in our ward as Laurel Advisor. This is my lifelong calling. In the 9 wards we've been in, I've served in the YW in 5 wards and been Laurel advisor 4 times. The other calllings I've had are primary. I'm just not meant to know people my age. Scott is also again serving in his lifelong calling...the Young Men's organization. His is the same story as mine except he's actually had to serve as president a few times. Not me. Phew.
