Following the success of the hotel’s seventh floor, Blanc de Noirs offers a more understated experience. With 30 seats, it brings a quieter pace to the evening, whether as a prelude, a pause, or a destination in itself. At its heart is one of Asia’s most extensive champagne collections, with 25 cuvées by the glass and a 500-label cellar spanning rare vintages and grower producers. Guests are also invited to explore Amber’s 3,000-label wine collection, creating a sense of discovery that evolves with each visit. Rituals such as the Champagne O’Clock Fountain lend a sense of occasion, while the cocktail programme explores both champagne-led signatures and refined classics. The food, curated by Richard Ekkebus, is designed with the same precision, from artisanal charcuterie carved to order to elevated, relaxed dishes that pair effortlessly with champagne.
