Burke Mountain’s Sled Dog Dash 2010

Our time in Vermont will be over before we know it.

We have felt this urgency to pack in as many activities as we can.

There are still several things we want to do/see while living in this region.

On our white board is a list of  “Vermont Exodus Ideas” like head to NYC one last time, visit the King Arthur Flour bakery and store, eat at some of the favorite local restaurants, visit Vermont’s Northeast Kingdom, etc.

It’s time to make these wishes a reality.

I found a fun winter event at Burke Mountain (in the Northeast Kingdom) this past weekend:

Red Velvet Cupcakes on Valentine’s Day

This is what happens when you start talking with your girlfriend about red velvet cupcakes:

You end up making them, just because they are so pretty and you have never had them before.

Get the recipe HERE.

After browsing through a dozen different recipes,

the only real difference between one  Red Velvet Cupcake recipe and another

is the quantity of butter or oil.

I loved these jumbo baking cups from Reynolds.  No cupcake pan needed.  Awesome.

Here’s a little info on the difference between bread flour, cake flour, all-purpose flour.

Rick and I loved them!  (He loves anything with cream cheese frosting!)

A lovely treat for you and yours this Valentine’s Day!

Under the Knife…

On February 1st, Rick drove me to the hospital at 5:45 am for surgery.  It was still dark out, and the hospital was quiet, the halls empty.

I checked in, dressed to the 9’s! (No make up, jewelry, pajama bottoms, hoodie, etc)

I was nervous. Nervous they’d screw up and ruin me for life.

But I received promises that all would go perfect. I had to believe in that.

I followed a woman to the “holding room” where I changed into a fancy hospital robe and these lovely hospital socks, which by the way, NEVER stay put! They’re all loosey goosey.

Tweet me?

Upon dumping  my little box of “tart” conversation hearts on the counter, my eyes quickly glanced over all the messages.

“Drama Queen”

“Holla”

“JK”

Tweet me

(I will never understand Twitter….)

What has this world come to?

There were some classics:

“My girl”

“Love ya”

“Love him”

“CHICKS RULE!”

Staging on a Dime

Our condo went on the market on February 4th.  In preparation, and a lot of help from my mother’s great eye, we staged it to sell!

Goal: Make it look spacious, dreamy and RICH!

My mom’s words were, “You’re trying to sell a dream…”

I kept that in mind.
