Regarding the phase voltage measurement, it is not possible to directly measure such voltage because there is no real motor, and there is no neutral point to connect. Please see demo picture below.
What we can do is to measure the line-line voltage and use the formula to get the phase voltage.
Please see example below, blue waveform is the measured line-line voltage, yellow waveform is the calculated phase voltage
