About us
Dreamed up by Nick Jones MBE (the founder of Soho House) and his creative design team, we are a growing family of twenty-first century motel-diners with big ambitions. In spirit, Mollie’s was born in America – an offspring of the classic roadside motel and drive-in diner, a welcome stopover on a route to somewhere. We’ve borrowed the inviting red neon signs and the easy-going vibe, the burgers, the shakes, the bottomless coffee, a dash of nostalgia, but there’s nothing old-school about Mollie’s. Expect innovative digital check-in, EV chargers, designer rooms with a fresh Soho House look and affordable prices. So far, two motel-diners. Mollie’s Oxfordshire opened in 2019. Bristol followed in 2021 (it’s already been named as the ‘Best Budget Hotel’ in the Sunday Times Best Places to Stay). A mega Mollie’s in Manchester is on track for 2025. With ten more motels in the pipeline. Mollie’s is going places. Come and join us.

✨ A true example of unreasonable hospitality in action! Recently, our newly promoted Floor Manager, Herbie, went above and beyond - not once, but twice in the same day. While seating some guests, he learned their car had broken down and they were waiting for the AA. Instead of simply wishing them luck, Herbie headed straight to the car park with jump leads in hand and got them back on the road. Later that day, a car broke down at the front of the drive-thru, bringing service to a standstill. Without hesitation, Herbie reversed his own car into position, hooked up the jump leads again, and saved the day (and the queue)! For that reason, we’re thrilled to share that Herbie has been voted as our Mollie’s Winner for August. ✨ Hospitality Spotlight Series – Meet Becc! ✨ Sales Office Manager at Mollie’s Manchester. A brief summary of her hospitality journey: Becc has spent nearly 16 years in the hospitality industry, starting out at Manchester United’s hospitality suites, before moving on to student nightclubs in North Wales, leading front-of-house teams, coordinating unforgettable weddings, and managing busy sales teams at some of Cheshire and Manchester’s most iconic venues, including Emirates Old Trafford. What she loves about hospitality: “Whether it’s a meeting, an overnight stay, or just grabbing a drink and a bite with friends- everyone is coming for an experience. I love being part of that experience and making sure we exceed expectations every time.” Her Mollie’s story: Becc joined us in February 2024 as Sales Office Manager and has already brought huge energy, positivity, and a passion for creating standout guest experiences. I trained as a chef at catering and hospitality college while gaining hands-on experience in hotels and pubs during my studies. Once qualified, I dived straight into the industry, starting at a privately owned hotel where I worked my way up from general assistant to General Manager… all by the age of 21! Hungry to grow and explore new avenues, I transitioned into the world of events, working across well-known hotel brands including Daniel Thwaites' Aztec Hotel as a Senior Wedding & Events Coordinator, and later leading sales teams in Best Western and Accor hotels in Bristol city centre." We are coming to Edinburgh! We’re thrilled to share that we’ve exchanged contracts with developers Parabola for our next site at Edinburgh Park. This marks a major milestone as Mollie’s continues to grow, with our fourth property, and our first in Scotland! A brief summary of your hospitality journey: “I’ve been in hospitality since I was 16, I'm now 24 and just stepping into management! I started out in a café in my hometown, then moved into hotel reception, and from there explored a variety of roles with both large chains and independents. Along the way, I learned different leadership styles and service levels, from casual to silver and white glove service.” Years in the hospitality industry: “8 years! I’ve tried to explore other industries, but nothing offered the same flexibility or satisfaction as hospitality ” Time at Mollie’s: “I’ve just celebrated my first year at Mollie’s!
