Last week at the Food Tech Summit & Expo in Mexico City, our Founder & Culinary Director Nidal Barake sat down with Beatriz Jacoste Lozano from KM ZERO Food Innovation Hub for a powerful conversation on what’s shaping the food and beverage industry — and how brands, founders, and investors can keep up. Here’s a glimpse at what they covered: 🍽 Consumers want real food, real stories, and tailored benefits. There is a rise of authenticity, personalized health, and sensory-driven experiences that is replacing generic wellness messaging. 📈 Inflation and tariffs are forcing brands to rethink sourcing and pricing strategies. The line between value and luxury is blurring with the rise of private label and premium-for-less products. 🌍 Sustainability, functional health, cultural authenticity, and digital commerce are structural trends. Meanwhile, viral foods come and go. Brands must learn to spot the difference — and place bets on long-term consumer behavior, not short-term buzz. 📊 With AI, we can now cross-reference menu trends, retail data, and online chatter to build micro-campaigns that speak to hyper-specific consumer segments — and evolve them in real time. 🇲🇽 LATAM offers more than ingredients — it offers insight. Whether it’s brands going north or U.S. companies sourcing stories in the south, LATAM is becoming essential to global food strategy. 💰 Investors are shifting from “alternative everything” to authentic innovation. Both Gluttonomy and KMZERO are evolving to meet this new reality: - Connecting creativity, capital, and consumer understanding - Designing systems that aren’t just brand-forward, but behavior-informed - Helping companies not only respond to change — but lead it At Gluttonomy, we believe in designing what’s next — and conversations like this fuel the work we do with founders and food-driven brands around the world. #FoodTech #FoodInnovation #Gluttonomy #FoodTechSummit #CulinaryTrends #AIinFood #LatAmFood #FutureOfFood #KMZERO #ConsumerInsight #FoodInvestment

Our first LA Chef Conference - and guess what our favorite food was? 😋 From operations and storytelling to the evolution of the LA food scene, every conversation reinforced why we're passionate about what we do in the food and beverage industry. Our Head of Marketing, Carolina Duarte, had the pleasure of reconnecting with industry leaders while also meeting inspiring chefs and founders shaping LA's culinary landscape. Thank you Brad Metzger & team for orchestrating such a full program (we know firsthand how much work goes into it!), and to our friends at #SPellegrino for the invitation. We even caught them sampling their exciting new product, CIAO! Honored to be part of this vibrant global community - where we listen, learn, and collectively drive the industry forward. What conversations or connections have inspired you lately in the food world? We'd love to hear your thoughts! 👇 #LAChefConf #Gluttonomy #FoodInnovation #FutureOfHospitality #BrandingInF&B #CulinaryMarketing #FoodBusiness #HospitalityIndustry #ChefCommunity

Shaping the Future of Cocktail Culture in Latin America At Gluttonomy, collaboration drives everything we do. We partnered with Diageo Latin America & Caribbean for a regional strategy workshop in Cartagena to help define the future of their World Class LATAM platform. World Class is more than a bartending competition. It’s a celebration of luxury spirits, craftsmanship, and connection. Our team worked closely with Diageo to evolve World Class into a cultural platform that connects brands, bartenders, and consumers across the region. The sessions included trend insights from our CEO Nidal Barake and collaborative work led by Latam Director Oscar Pachano G Pachano to align the vision across multiple markets. This workshop was just the beginning. We’re proud to support Diageo in building a platform that goes beyond events and becomes a lasting part of the region’s hospitality culture. #Gluttonomy #WorldClassLATAM #DiageoLAC #LuxurySpirits #CocktailCulture #FoodAndBeverage

We’re proud to share that Gluttonomy is growing in Latin America, with a regional office based in Panama. This step strengthens our commitment to shaping the future of food and beverage across the region — from Mexico to Argentina. Under the leadership of our Latam Director, Oscar Pachano G, and the vision of our founder, Nidal Barake, this expansion is a natural evolution of our mission: empower brands to shape the future of food. In Latam, we’re already working with industry leaders like Diageo and cbc/RFRSH, while drawing inspiration from our existing network of chefs in the region — including Mitsuharu Tsumura, Daniela Soto-Innes, Rodolfo Guzmán, Jorge Vallejo, and Virgilio Martínez. As we grow, we remain focused on what sets us apart: deep industry expertise, culinary sensibility, and a commitment to building brands that shape food culture with intention. If you’re building the future of food and beverage in LATAM, reach out, we’d love to work together! #Gluttonomy #LATAMExpansion #FoodAndBeverage #CulinaryInnovation #BrandStrategy #Panama #FoodCulture #FBLATAM #CreativeAgency

What does it feel like to build a brand with Gluttonomy? For chefs Jhonny Delgado and Richard Ortega behind To Be Determined Miami, it meant more than visuals. It meant being seen, supported, and guided as they redefined what kind of kitchen — and experience — they wanted to create. In their own words: this was about building something that reflected who they are, not just what they serve. Real collaboration. Real transformation. Real partnership. #gluttonomyprojects #clienttestimonial #brandingthatmatters #hospitalitybranding #restaurantvision #tbdmiami

What happens when a restaurant builds its brand not on what it knows, but on what it’s willing to discover? That’s the story behind To Be Determined (TBD), a wine bar and seasonal kitchen in Miami. The founders came to us with a space, a name, and a desire to break away from the routines that defined their past. They didn’t want to repeat. They wanted to reimagine. At Gluttonomy, we saw the opportunity to do what we do best: build a brand that lives and evolves in the real world, alongside the people who shape it every day. Instead of creating a fixed identity, we developed a flexible system rooted in their core value of openness. That meant: • A handwritten logotype that reflects personality and imperfection • Menus designed to shift every two weeks with ease • A design language that supports spontaneity without losing clarity This was about co-creation. Real conversations. Operational empathy. Strategy that understood the chaos of a kitchen and turned it into a strength. TBD is more than a name. It is a mindset that proves intentionality and improvisation can work together. And for us, it is a reminder that the best brands are not always built from what is set in stone. They are built from what is still unfolding. Amano wasn’t just a tasting menu. It was a handcrafted experience. When Chef Diego Oka came to us with the vision for Amano, we knew this would be something special — an exploration of food, ceramics, and design coming together with deep intention. From the name and visual identity to the postcards, labels, menus, and take-home gifts — every detail was created to support the story, not distract from it. Our art direction treated each element as essential: tools for storytelling, memory-making, and emotional connection. This is what we do at Gluttonomy. We build creative campaigns, brands, products, and experiences that live far beyond the plate. 🔗 Read the full story: https://lnkd.in/dVy5yWN4
