Chef Javier Barrientos and Joan Schwaba, MS, RDN teamed up to bring wellness to the forefront through delicious, nutritious cooking in our Cultivate Teaching Kitchen at Lutheran Life Communities. 💚 In this session, Chef Javier prepared a rhubarb compote while Joan shared the powerful health benefits of fruits and vegetables. She highlighted how they add fiber, antioxidants, and vibrant color to the plate. Here’s the recipe from the demo: Rhubarb Compote with Greek Yogurt Serves 4 Ingredients • 7 cups fresh rhubarb, roughly chopped • 1 cup honey • 1 tsp fresh ginger root, grated • 1/4 tsp ground cardamom • 1/4 tsp kosher salt • 1 pint plain Greek yogurt Directions Roughly chop rhubarb and grate ginger. In a large saucepan, combine rhubarb, ginger, honey, cardamom, and salt. Set over medium heat and cook, stirring often, until the mixture begins to simmer. Cover and cook on low, stirring occasionally, until the rhubarb breaks down (about 15 minutes). Let cool to room temperature.
