It’s Friday, market definition day! This time, it's all about coffee machines. And not just any coffee machines, but single-serve vs. multi-serve machines. It’s been brought to my attention – and btw, thanks for all of your feedback everyone! – that the past months, virtually all (if not all) of my posts were related to food or drinks. So at the request of some of you, this one is not about food or drinks, but about machine… well I guess we’re in hybrid territory here: coffee machines (perhaps we can move onto conveyor belt machines sometime later in the year…). At the end of 2014, DE Master Blenders (Demb) and Mondelez notified their creation of a JV to the European Commission (EC). The JV would be active in, inter alia, the manufacture and sale of coffee products, including most notably coffee machines. The EC had many different markets to consider, but for this post, we’re focusing on “single-serve machines and consumables” (vs. multi-serve…). The EC considered that coffee machines are various appliances used to produce coffee ranging between simple French press machines to the more complicated single-serve machines which can produce various types of beverages in addition to coffee (so called multi-drink machines). The coffee machines sector can be further differentiated according to whether the brewing method used produces more than one cup at a time, like for instance traditional drip filter machines (so-called "multi-serve"), or only one cup at a time (so-called "single-serve"). Market participants noted that single-serve machines are more premium and associated with better quality than multi-serve machines. With a single-serve machine, the consumer would be able to prepare coffee in a much more convenient way. Ok.. not so sure about that, because what if you have a large household that drinks a lot of coffee? Or what if you have friends and family over? Or what if you’re just a big coffee drinker? Also, market participants noted that single-serve machines are targeted at wealthier consumers. Ok.. well I guess those market participants were not yet aware of Nespresso and other “premium brands” launching their filter coffee pot machines… But also, there are real coffee connoisseurs that swear by filter vs. single-serve. Not entirely convinced about this definition, I should say… Would you not consider a multi-serve machine as a substitute for a single-serve machine? Really? Do consumers typically have machines of each? Or will one machine do the trick? NB: EC’s decision available here: https://okt.to/61n5gM #fridaymarketdefinitionday #tgifriday #marketdefinition #mergercontrol #antitrust #antitrustlaw #competitionlaw #nespresso #coffeemachine #whatelse? #coffee #espresso

Modern day Cafe - with a pinch of AI! Cafes are much more than just great coffee, have you ever wondered why your chai tastes exactly the same at every Chaayos outlet? Or how Starbucks knows what you'll order before you do? AI & IoT as the secret ingredients - here’s what’s cooking! ☕ Next Gen Cafe - Serving beyond coffee! #Bengaluru, popularly known as the #startup hub, has cafes like Chaayos, Cafe Coffee day or #Starbucks (to name a few) that attract tech professionals and provide an environment for networking and collaboration, not only serving their cup of tea but also providing free wifi & the space to share their intriguing ideas that might just end up as the next big thing! As Chaayos VP Anit Kumar said in a discussion with Inc42, “...We are not just selling chai but also the feeling accompanying our products…” What’s in the Kitchen? #AI and Internet of Things (#IoT) are revolutionising the cafe and restaurant industry with Automated machines and blenders being adopted by cafe brands to ensure consistent drink quality and minimise wasted ingredients. Chaayos has installed IoT-enabled brewing machines, named "Chai Monks" in their cafes. These machines use standardised, programmed recipes to precisely mix and brew tea. This ensures consistent flavour and quality across the 80,000+ potential tea combinations to their customers. = > Starbucks uses its own AI platform, Deep Brew, to personalise customer experiences via its app, and to smoothly handle store operations, staffing, and inventory. = > Third Wave Coffee has AI adoption in the coffee-making craft with specialised rostering equipment in roasting and controlling temperature…These are just a few examples! Data insights! The global restaurant and food service industry is valued at $4.03 trillion this year, expected to hit $6.81 trillion by 2032 (a 7.8% CAGR). The AI in food and beverage market is also booming, predicted to grow by $32.2 billion with a 34.5% CAGR from 2024 to 2029 as per the article published by restrowrks Future Growth! Expansion of AI in quick-service restaurants (QSRs): The global market for AI in QSRs is predicted to jump from $915.3 million in 2024 to over $12 billion by 2034, driven by personalised recommendations, operational efficiency, and automated ordering systems, Cafes combined with AI and IoT are not only helping the kitchen in preparation of the "Mere wali chai!" But also providing spaces with free WiFi, helping young entrepreneurs work on their ambitious ideas that can eventually transform the nation! Yet despite all these innovations - What do you think, their beverages, which seem overpriced, can compete with the #Udupi tea or #Cothas filter coffee? Share your thoughts in the comment section. Thanks for reading :)

𝐍𝐞𝐬𝐩𝐫𝐞𝐬𝐬𝐨 𝐡𝐚𝐬 𝐝𝐨𝐧𝐞 𝐡𝐚𝐥𝐟 𝐨𝐟 𝐭𝐡𝐞 𝐣𝐨𝐛. 𝐌𝐲 𝐧𝐞𝐰 𝐯𝐞𝐧𝐭𝐮𝐫𝐞 𝐰𝐢𝐥𝐥 𝐟𝐢𝐧𝐢𝐬𝐡 𝐭𝐡𝐞 𝐣𝐨𝐮𝐫𝐧𝐞𝐲. Many people know me from the tea industry, but in reality, my expertise lies in the broader flavor industry. I chose to focus on functional beverages because this is where flavor can truly take the spotlight. Tea was only one segment of that world and one chapter of my journey, and now the coffee industry is equally ripe for disruption through my technologies. 𝐓𝐡𝐞 𝐅𝐨𝐮𝐫 𝐀𝐜𝐡𝐢𝐥𝐥𝐞𝐬 𝐇𝐞𝐞𝐥𝐬 𝐨𝐟 𝐍𝐞𝐬𝐩𝐫𝐞𝐬𝐬𝐨: • When Eric Favre created the Nespresso concept, his ambition was to deliver an authentic Italian-style espresso experience. He succeeded in producing a pleasant espresso, but it never quite matched the real thing, which is one reason Nespresso never gained traction in the Italian market. This exposes a fundamental problem: Nespresso can’t justify pricing its capsules ($0,6) higher than the espresso served in cafés. ($1,5) • Beyond that, Nespresso’s concept focuses exclusively on the espresso segment of the coffee industry. Yet espresso isn’t the most popular coffee format in many major markets. This explains why Nespresso never captured significant market share in countries like the United States, where 𝐊𝐞𝐮𝐫𝐢𝐠 remains dominant. • Finally, Nespresso’s ecosystem locks customers in only after they purchase the machine. However, the upfront cost of the machine remains a major barrier to attracting new users, requiring a significant customer acquisition cost to overcome that challenge. • Another weakness of Nespresso lies in its used capsules. Rising environmental concerns have driven the market toward capsule-free single-dose coffee machines, a high-end segment that is now booming both in homes and across the hospitality industry. The global coffee market is expected to reach $155.64 billion in revenue by 2026, yet Nespresso generated only $7 billion in 2023. Meanwhile, a new generation of brands is proving that consumers are ready to pay much more for a truly exceptional coffee experience. Take 𝐂𝐨𝐦𝐞𝐭𝐞𝐞𝐫, for example: an instant coffee made from flash-frozen concentrate using specialty-grade beans. Cometeer confidently branded its product as “the best coffee experience ever” and priced its capsules at $3 each, 𝐟𝐢𝐯𝐞 𝐭𝐢𝐦𝐞𝐬 𝐡𝐢𝐠𝐡𝐞𝐫 𝐭𝐡𝐚𝐧 𝐍𝐞𝐬𝐩𝐫𝐞𝐬𝐬𝐨. Despite its limited scalability due to the need for chilled logistics, Cometeer still managed to raise $100 million. This is a strong signal that the demand for high-end coffee remains largely unmet by Nespresso and is still waiting for a breakthrough innovation. What I achieved with instant tea, I will now recreate in coffee, this time with far more sophisticated know-how and technologies. Once accomplished, coffee lovers will discover a completely new category of coffee and experience flavors they never imagined possible.

Host Milano 2025: Three Trends Reshaping Coffee’s Future Our founder Scott Martin, has just returned from Host Milano, one of the world’s most influential events for coffee innovation. What we saw there confirmed that our industry is at an inflection point: where automation meets artistry, competition fuels innovation, and smart operators embrace integration over isolation. Here are three key trends Scott observed that point to where coffee is heading next: 1. Ubermilk + Eversys: The Undercounter Revolution: The integration of Ubermilk undercounter dispensing system, handling dairy, oat, plant-based, and flavoured milk, with Eversys SA platforms is redefining workflow efficiency. Clean, uncluttered counters. Precision quality with minimal training. Perfect temperature control and consistent texture every single time. For operators, this means seamless service and design harmony, where technology quietly powers performance beneath the surface. The result? Elevated quality and faster onboarding for baristas and teams alike. 2. Chinese Manufacturers: Competition Drives Innovation Walk the halls at Host Milano and it’s impossible to miss the growing influence of Chinese manufacturers. Brands such as Jetino, DrCoffee, and CAYE Technology are rapidly scaling, bringing competitive quality and production capacity that’s reshaping the landscape. Just as Chinese EV makers transformed mobility, this new wave of coffee equipment manufacturers is driving accessibility and innovation across the sector. As competition intensifies, everyone benefits, premium features become standard, innovation accelerates, and technology becomes more accessible for all. 3. SEB Professional: Ecosystem Thinking: For the first time, SEB Professional showcased their full portfolio, WMF, Schaerer, Curtis, La San Marco, and Zummo, together. This wasn’t just about brand consolidation; it represented a shift toward ecosystem thinking. Scaling across multiple formats and markets requires more than great equipment. It demands integration across service, supply chain, data, and operational design. SEB’s approach highlights the growing need for partners who can support end-to-end beverage solutions. 4. Adapting to a Changing Market: Host Milano 2025 made it clear that the coffee industry is evolving rapidly. Consumers expect more convenience, better value, and higher quality, all at once. Rising labour costs, tighter margins, and expensive real estate are accelerating change. What we’re seeing is encouraging: * Smarter automation that enhances craft while reducing training demands * Competitive entrants driving accessibility and innovation * Integrated ecosystems solving operational challenges end-to-end * Format innovation connecting health, convenience, and holistic beverage programs It wasn’t just a trade show, it was a glimpse into coffee’s next chapter: More automated. More competitive. More integrated. More accessible.

"10 Black-Owned Coffee Shops and Roasters in DetroitThe origins of coffee trace back to Ethiopia, as far back as the 9th century. While African farmers and producers are credited with the roots of this commodity, the coffee industry has largely shifted away from the Black community. Making my job easy ! So, as the latest Member of the Air-Motion Roasters Team, I was employed as the Marketing Manager and Brand Developer of AMR. But in order to do my job effectively, I really looked at the roasters offered by AMR and investigated why they are so different. I asked, what would be the advantage for anyone in the Coffee Roasting Industry to buy one, in fact I was looking for answers that would “make my job easy”. In my investigations, it became clear to me, that the AMR Roaster was definitely the Next Generation Solution in Coffee Roasting today. But what was this “Power of Air”, that described these Roasters, and why would owning an Air-Motion Roaster change everything for the purchaser. When one walks into a Coffee Roastery, one can often smell the Passion before you can even see it - You know, that perfect balance of Aroma, Craft and Control. But, behind every great Coffee lies one crucial decision: the choice of one’s Roaster. At Air-Motion Roasters, they have spent years reimagining what a Coffee Roaster should be - not just in Design and Engineering, but in Performance, Consistency and of course Sustainability. So, here’s why our customers around the World have switched to an Air-Motion Roaster. Firstly, the Air-Based Convection System eliminates scorching and tipping, having a more gentle approach to roasting one’s beans, providing just the right amount of heat required to take the Coffee Beans through the different phases in the roasting process and delivering an even, repeatable and consistent roast, batch after batch - with a flavour of clarity, cleanliness and smoothness, yet a boldness and complexity that one desires in the cup is quite an unparalleled quality when comparing it to other roasters. There is also the question of Sustainability by its Design, by way of being an energy efficient All-Electric Air Technology, resulting in lower costs to run, reduced emissions, cleaner air in your workspace and environment - it’s not just good coffee, it’s Good Conscience Roasting. The Plug-and Play Simplicity, not only provides Precision Control, Minimal Maintenance, and Intuitive Operation, but it lets the roasters focus on the Art of Roasting and not the mechanics. Whether you’re a startup roastery or scaling up your operation, AMR definitely makes roasting easier, smarter and more enjoyable. The one thing that has really impressed me besides the roasting quality is, these roasters are not only Built to Last, but are Engineered to Impress as well. Every Air-Motion Roaster is handcrafted with industrial-grade components, ensuring long-term durability and reliability - because in the Coffee Roasting Business, one’s investment should last as long as one’s Passion for Roasting Coffee. For me, it all starts with an AMR, the owning of one's own Creativity and Innovation and definitely standing out from the crowd, that is what makes my job so easy and enjoyable, I'm truly blessed ! The Rise of Geisha Coffee in Thailand: From “Crown Jewel” to Everyday Cup [bassPanya] THAILAND Business Insights Series Not long ago, Geisha Coffee was known as the Crown Jewel of the specialty coffee world — rare, floral, and often auctioned at record-breaking prices in Panama. Today, it’s becoming surprisingly accessible in Thailand, with prices starting around THB 85–90 (≈ US $3) per cup. What was once a connoisseur’s treasure is now a growing trend among Thai coffee drinkers — a fascinating case of “Specialty Premium moving into Specialty Mass.” From Ethiopian Forests to Panama’s Glory Geisha (or Gesha) originated in the lush Gori Gesha forest of Ethiopia, but gained fame in Panama, where farms like Lamastus Family Estate and Finca Sofia turned it into an award-winning legend. Known for its complex flavor profile, Geisha delivers aromas of jasmine and tropical fruits, layered sweetness, and tea-like clarity. It’s a variety that demands high altitude, stable climate, and meticulous care — from cultivation to harvest and processing. The result? Exquisite quality, but low yield — which explains its rarity and prestige. Thailand Joins the Geisha Movement Thailand’s coffee culture is evolving fast. Several local chains and specialty cafés are now introducing Geisha brews to the wider market: ☕ UNO Coffee – Panama Geisha, starting at THB 85/cup ☕ Coffee World – Geisha Blend, from THB 90/cup ☕ CASA Lapin – Costa Rica Hacienda Copey, starting at THB 200/cup ☕ And a growing number of boutique specialty cafés nationwide What’s remarkable is how these brands are helping bridge the gap between elitely priced specialty beans and mainstream consumer experience. 💡 From Luxury to “Value for Money” As consumers become more discerning, “Value for Money” now outweighs pure brand loyalty. The democratization of specialty coffee — bringing once-exclusive beans like Geisha to everyday menus — reflects a broader shift in consumer mindset: quality, transparency, and authenticity matter more than the label. It’s a signal that even global giants like Starbucks may need to rethink their strategy as local coffee chains capture the hearts (and cups) of the new generation. Did you know? Top-grade Geisha coffees can achieve SCA scores above 90, while entry-level lots score around 80–85 — showing that “Geisha” itself is not one flavor, but a spectrum of craftsmanship and terroir. ☕ Thailand’s Coffee Scene is Evolving From Chiang Mai’s mountain beans to Panama’s prized Geisha, Thailand’s coffee journey is becoming richer, more diverse, and delightfully inclusive — one cup at a time. #GeishaCoffee #SpecialtyCoffee #CoffeeTrend #ThailandCoffeeCulture #PanamaGeisha #CoffeeInnovation #ValueForMoney #ConsumerInsight
