Summer Reading registration to begin
This month we will be kicking off our Summer Reading Registration, beginning May 14. This years schedule for Be Creative @ Your Library will be somewhat different than in past years. Summer Reading runs from June 2 through July 2. The schedule is as follows: Pre-School through Kindergarten Thursdays, 10:30-11:30 a.m. First through Third grade Thursdays, 1:30-3:30 p.m. Third through Fifth grade Tuesdays, 1-3 p.m. Teens (middle, high school) - Tuesdays, 3:305:30 p.m. The Teen Theme is Express Yourself @ Your Library. Teen volunteers are needed for all the elementary sessions, so if you are interested, contact Pat at the library. Registration forms will be brary a Flu-free Zone! Bean Bags The new teen reading room is in need of bean bag furniture. If you have some that you were going to get rid of, consider donating these items to the library. Library Survey The Watauga Regional Library has placed a survey of library services on our Web page. Imagination Library On-Line Registration You may now register your child, age birth through five, for the Imagination Library conveniently on-line. Another senior center fundraising event to put on your calendar is the Strawberry Festival, which will be held on the grounds of Unicoi Elementary School on Saturday, May 16, from 10 a.m. to 8 p.m. Our plans are to have strawberry sundaes and slices of fresh strawberry pies again this year. We need several volunteers to assist with setup, serving and cleanup so please call our office at 7435111 if you can donate some time on that day. SCRAMBLED EGGS WITH RAMPS, MORELS AND ASPARAGUS 1 tablespoon butter 1/4 cup thinly sliced trimmed ramp bulbs and slender stems plus 1 cup thinly sliced green tops (from about 4 large ramps) 4 medium asparagus spears, trimmed, cut diagonally into 1/2 -inch pieces (about 1/2 cup) 1 ounce fresh morel mushrooms, thinly sliced lengthwise (about 1/2 cup) 4 large eggs, beaten to blend Melt butter in medium nonstick skillet over medium heat. Add ramp bulbs and stems to skillet; saute 3 minutes. Add green tops, asparagus and mushrooms; saute until ramps are soft and asparagus is crisp-tender, about 9 minutes. Add eggs to skillet; sprinkle with salt and pepper. Stir until eggs are very softly set, about 2 minutes. Season to taste with salt and pepper. Divide scrambled eggs between 2 plates and serve immediately. Makes 2 servings. Note: This recipe is as delicious for lunch or supper as it is for breakfast. Morel mushrooms tend to trap grit, so swish them around in cool water, transfer them to fresh water for a 15-minute soak, and pat dry before using.

Transfer flour mixture to medium bowl. Add buttermilk mixture; stir until dough forms. Turn dough out onto lightly floured work surface and press out to 7-inch round, about 1/2 inch thick. Using 2-inch-diameter biscuit cutter dipped in flour, cut out to 1/2-inch thickness and cut out additional rounds. Transfer dough rounds to baking sheet. Brush biscuit tops with some of egg glaze. Sprinkle with cracked coriander seeds. Bake biscuits until golden brown, about 20 minutes.

Celebration Birthday parties are fantastic! There are games to play, prizes to win, balloons to pop, cakes and chips to eat and presents to open. Watching the eyes of children as they approach each birthday with excitement brings joy to the parents. With youthful exuberance the children dive into each present, ripping the neatly placed bow from its place. The pretty paper so carefully picked by mom is shredded into smithereens. They are searching for the hidden treasure to claim for their very own. I often wonder if the children discover the true treasure that is within each package. The treasure that is larger than the package itself. A jewel, a gem that out sparkles the stars in heaven. A gift that is not purchased with money, nor from the sweat of a days labor. A prize that will not fade with age, or be broken by too much use. The battery will not run down, and the parts will not wear out. What is the valued gift? LOVE! The special occasions that bring our family together creates much excitement and worn out feet. There is a good kind of tired after the party comes to a close: smiling faces, warm feelings, renewed acquaintances and created memories. There is also a sense of accomplishment when the children are tucked into bed, the dishes are washed, special pieces are returned to their boxes, and the clock strikes midnight. There are many special occasions to celebrate during a lifetime: birthdays, mothers day, fathers day, anniversaries, Christmas and more. Yet, there is one such day described in the scriptures: I tell you that in the same way there will be more rejoicing in heaven over one sinner who repents than over ninety-nine righteous persons who do not need to repent, Luke 17:7 NIV.
