THE BIRTH OF YOUTUBE
In 2005, Chad Hurley and Steve Chen, two software (11) ______ from Silicon Valley in California, were

MICROWAVING
Microwaving is a method of cooking where food is bombarded by microwaves, usually within an appliance
called a microwave oven which excite the water, fat and sugar molecules, thereby heating (cooking) both the
outside and center of the food at the same time. (1)…………………
(A common myth is that a microwave oven cooks from the center of the food outward. This appears to happen
because heat generated at the surface escapes more readily from the surface of the food into the surrounding air.)
One advantage of microwaving is that small amounts of food can be heated very quickly, making it useful for
reheating leftovers.
The disadvantage is that food which is microwaved does not undergo some of the chemical reactions, such as
browning, which makes the food visually attractive. Primitive microwave ovens often do not cook evenly,
leading to a concern that bacteria easily killed by more traditional cooking methods may survive the quick
cooking time in "cold spots", though the food item as a whole is cooked to a safe average temperature. (2) ……
Some high-end microwave ovens are combined with a convection oven which basically cook the food using
microwave and hot air simultaneously to achieve both the fast cooking time and browning effect.

However microwave ovens are used in some fast food chains and special microwave bags are available for
cooking fowl or large joints of meat.
Professional chefs generally recommend using microwaves for a limited set of tasks, including: melting fats
(such as butter) and chocolate, cooking grains like oatmeal and grits, cooking rice, thawing frozen meats and
vegetables before cooking by other methods and quickly reheating already-cooked foods.
Using a microwave to boil water is potentially dangerous, due to superheating. In a microwave, water can be
raised quickly to a temperature above the boiling point before major bubbles form, especially if it is purified and
in a very clean glass vessel. (4) …………………
This effect is rare, even for scientists who try to deliberately recreate it, and any seed whatsoever for boiling is
likely to prevent the problem. Boiling water with, for instance, a teabag already in it will prevent any dangers by
providing a seed, as will using a mug that is not perfectly clean.
The risk greatly increases when water has already been boiled once in the same container. This situation can
occur if the user of the oven boiled the water once, forgot about it, then came back later to boil it again. The first
time the water boils, the seed bubbles (microscopic bubbles of air around which larger steam bubbles grow) are
used up and largely eliminated from the water as it cools down. When the water is heated again, the lack of seed
bubbles causes superheating, and a risk of a steam explosion when the water's surface is disturbed.
Placing something in the water before heating can mostly alleviate this risk. If you are planning to mix
something with the water, say tea or hot chocolate, adding it before heating will insure that the water boils.
Otherwise, placing a wood object, for instance a chopstick, in the water before heating will also work.
Care should be taken when removing heated water from a microwave. Make sure that the hands are protected
from possible liquid boil-over, place the container on a level, heat-proof surface and stir liquid with a warm
spoon. Also, never add powdered substances (such as instant coffee or cocoa mix) to the container taken from
the microwave, due to the addition of all those seed bubbles and the potential for violent, spontaneous boiling.

Metal objects, such as metal utensils, in a microwave oven can lead to dangerous situations. Metals do not
absorb microwaves effectively. Instead, metals reflect microwaves, thereby preventing the latter from reaching

Niagara Falls, one of the most famous North American natural wonders, has long been a popular tourist
destination. Tourists today flock to see the two falls that actually constitute Niagara Falls: the 173- foot- high
Horseshoe Falls on the Canadian side of the Niagara River in the Canadian province of Ontario and the 182-
foot-high American Falls on the U.S. side of the river in the state of New York. Approximately 85 percent of
the water that goes over the falls actually goes over Horseshoe Falls, with the rest going over American Falls.
Most visitors come between April and October, and it is quite a popular activity to take a steamer out onto
the river and right up to the base of the falls for a close-up view. It is also possible to get a spectacular view
of the falls from the strategic locations along the Niagara River, such as Prospect Point of Table Rock, or
from one of the four observation towers which have heights up to 500 feet.
Tourists have been visiting Niagara Falls in large numbers since the 1800's; annual visitation now averages
above 10 million visitors per year. Because of concern that all these tourists would inadvertently destroy the
natural beauty of this scenic wonder, the State of New York in 1885 created Niagara Falls Park in order to
protect the land surrounding American Falls. A year later Canada created Queen Victoria Park on the
Canadian side of the Niagara, around Horseshoe Falls. With the area surrounding the falls under the
jurisdiction of government agencies, appropriate steps could be taken to preserve the pristine beauty of the

I’ve done a lot of travelling in Europe and Asia throughout my adult life and it was while I was teaching in
China that I became interested in acupuncture. It is common for people there to have acupuncture treatment,

lucky to discover that the town where I lived had a famous and well-reputed college of traditional
acupuncture.
Alternative medicine is particularly important for me because I firmly believe that it works on the level of
body, mind and spirit.

Of course this medicine is very powerful and can consequently have powerful side effects. Alternative
medicine like acupuncture on the other hand is aimed at treating the person as a whole. When a person’s ill,
there’s something in their life which is putting their energy levels out of balance. What alternative therapies
try to do is help to gradually push that energy back into balance. The result is that any disease present might
naturally disappear as it cannot survive when energies are balanced.
The treatments consist largely of balancing the energy between the different meridians of a person’s body.

Treatment aims to free blocks of energy in these meridians which may be causing ill health and which may
have been there for many years. It would be an odd state of affairs if a practicing alternative therapist had not
had treatment themselves and this is certainly not the case for myself.

I’ve never suffered particularly from physical problems but treatment for my mental and spiritual wellbeing
has been very successful. I’ve treated a wide range of people for various conditions, for example people
suffering from stress and anxiety and helped them to cope with stressful situations in their lives.

There’s another woman who suffers from arthritis of the hip and at the moment I’m treating an old lady who
has several health problems, one of them being Parkinson’s Disease. All these people have found that
acupuncture has made them feel more balanced in themselves and they have certainly benefited from the
treatment. To date I currently own the Licentiate in Acupuncture. This course lasted three years and I had to
go to the college about one weekend in three.

I had a large amount of homework to do and practical work, which I did two or three evenings a week. This
entailed locating points on different people. As you can imagine, this isn’t straightforward as people are
different sizes and have different shaped bodies. In the future I hope to set up an alternative health clinic
which will involve myself as an acupuncturist but perhaps other people as well.

I’d like to set this up somewhere in a rural setting, where people could enjoy coming not only for the
treatment but where they would be able to sit and enjoy the scenery, go for walks and basically feel free from

The crowd holds its breath. High above them on the climbing wall, hanging upside down by the tips of two
fingers, is the French climber Francois Lombard. He is competing in the World Cup Climbing Championships
at Birmingham’s National Indoor Arena.

The National Indoor Arena is more famous for staging the TV show Gladiators, but the television programme
and the World Cup Climbing Championships share at least one feature - The Wall. And the fact that either
event is possible is the result of a new and rapidly developing technology.

Until the mid- 1960s, climbers practiced their skills on cliffs in areas where there was a plentiful supply of
good climbing angles. During the winter they would either tolerate the cold weather, go walking instead or
climb on snow and ice in Scotland.

However, as the sport developed it was increasingly important for top climbers to keep fit. With the cliffs
unusable for much of the year, they used brick-edges or stone buildings to ‘work out’ on. This allowed them
to keep their fingers strong and beat off the boredom of not being able to climb. It wasn’t long before many
sports center started building walls specifically for the task, using bricks with special edges to cling on to.

Many of these early walls followed the example set by Don Robison, a teacher of physical education who,
during the mid- 1960s, constructed a climbing wall in corridor of his department at Leeds University. Robison
developed the idea of setting natural rock in a block of concrete, which could then be included in a wall.

Scores of climbing walls of this kind were built in sports halls up and down the country throughout the 1970s
but they had obvious design problems. Walls could only be built in a vertical plane, whereas cliffs outside
have features like overhangs and angled slabs of rock. There was the added drawback that once the walls were
up they couldn’t be altered and climbers would eventually tire of their repetitive nature, despite thinking of
every combination of holds possible.

In 1985, a Frenchman, Francois Savigny, developed a material which he moulded into shapes like those that
climbers would find on the cliffs. These could be fixed onto any existing wall and then taken off when
climbers got bored with a particular combination.

French manufactures also began to experiment with panels on steel framework. Concrete had proved too
heavy to create overhanging walls without major building work, but steel frames could be erected anywhere as
free - standing structures. A system of interchangeable fixtures gave climbers an endless supply of new holds.

Today we take electricity for granted and perhaps we do not realize just how useful this discovery has been.
Steam was the first invention that replaced wind power. It was used to drive engines and was passed through
pipes and radiators to warm rooms. Petrol mixed with air was the next invention that provided power.
Exploded in a cylinder, it drove a motor engine. Beyond these simple and direct uses, those forms have not
much adaptability.
On the other hand, we make use of electricity in thousands of ways. From the powerful voltages that drive our
electric trains to the tiny current needed to work a simple calculator, and from the huge electric magnet in steel
works that can lift 10 tons to the tiny electric magnet in a doorbell, all are powered by electricity. An electric
current can be made with equal ease to heat a huge mass of molten metal in a furnace, or to boil a jug for a cup
of coffee.
Other than atomic energy, which has not as yet been harnessed to the full, electricity is the greatest power in
the world. It is flexible, and so adaptable for any task for which it is wanted. It travels so easily and with
incredible speed along wires and conductors that it can be supplied instantly over vast distances. To generate
electricity, huge turbines or generators must be turned. In Australia they use coal or water to drive this
machinery. When dams are built, falling water is used to drive the turbines without polluting the atmosphere
with smoke from coal. Atomic power is used in several countries but there is always the fear of an accident. A
tragedy once occurred at Chernobyl, in Ukraine, at an atomic power plant used to make electricity. The reactor
leaked, which caused many deaths through radiation.
Now scientists are examining new ways of creating electricity without harmful effects to the environment.
They may harness the tides as they flow in and out of bays. Most importantly, they hope to trap sunlight more
efficiently. We do not use solar heaters for swimming pools but as yet improvement in the capacity of the
solar cells to create more current is necessary. When this happens, electric cars will be viable and the world
will rid itself of the toxic gases given off by trucks and cars that burn fossil fuels.

In Death Valley, California, one of the hottest, most arid places in North America, there is much salt,
and salt can damage rocks impressively. Inhabitants of areas elsewhere, where streets and highways are salted

sedimentary rocks, or preexisting or incipient fractions, and along boundaries between individual mineral
crystals or grains. Besides crystal growth, the expansion of halite crystals (the same as everyday table salt) by
heating and of sulfates and similar salts by hydration can contribute additional stresses. A rock durable
enough to have withstood natural conditions for a very long time in other areas could probably be shattered
into small pieces by salt weathering within a few generations.
The dominant salt in Death Valley is halite, or sodium chloride, but other salts, mostly carbonates and

It is generally believed that the ancient Polynesians were the first to surf and to introduce surfing to the
Hawaiian Islands in the central Pacific Ocean. Early records show that surfing was at its height in the late 18th
century. During the next century, the sport declined, but by the beginning of the 20th century its popularity

Global warming could cause drought and possibly famine in China the source of much of Hong
Kong's food, by 2050, a new report predicts. Hong Kong could also be at risk from flooding as sea levels rose
The report recommends building sea-walls around low-lying areas such as the new port and airport
reclamations. Published by the World Wide Fund for Nature (WWF), the report, which includes work by
members of the Chinese Academy of Meteorological Sciences, uses the mostrecent projections on climate

By 2050 about 30 to 40 per cent of the country will experience changes in the type of vegetation it
supports, with tropical and sub-tropical forest conditions shifting northward and hot desert conditions rising in
the west where currently the desert is temperate. Crop-growing areas will expand but any benefit is expected
to be negated by increased evaporation of moisture), making it too dry to grow crops such as rice. The
growing season also is expected to alter, becoming shorter in southern and central China, the mainland's
breadbasket. The rapid changes make it unlikely that plants could adapt.
"China will produce smaller crops. In the central and northern areas, and the southern part, there will
be decreased production because of water limitations," Dr. Rik Leemans, one of the authors of the report, said
during a brief visit to the territory yesterday. Famine could result because of the demands of feeding the
population - particularly if it grows - and the diminished productivity of the land. "It looks very difficult for
the world as a whole," he said. Global warming is caused by the burning of large amounts of fossil fuels, such
as coal and oil, which release gases that trap heat in the atmosphere. World temperatures already have
increased this century by about 0.6 degrees Celsius and are projected to rise by between 1.6 degrees and 3.8
degrees by 2100.
Dr. Leemans said China's reliance on coal-fired power for its indus-trial growth did not bode well for
the world climate. "I think the political and economic powers in China are much greater than the environ-
mental powers, and [greenhouse gas emissions] could accelerate,"
Dr-Leemans said. "China is not taking the problem seriously yet, although it is trying to incorporate this kind
of research to see what is going to happen."
The climate change report, which will be released tomorrow, focused on China but Mr David Melville
of WWF-Hong Kong said some of the depressing scenarios could apply to the territory. Food supplies, for
instance, could be affected by lower crop yields. "Maybe we could afford to import food from elsewhere but
you have to keep in mind that the type of changes experienced in southern China will take place elsewhere as
well," he said. Sea levels could rise as glaciers melted and the higher temperatures expanded the size of the
oceans, threatening much of developed Hong Kong which is built on reclaimed land. Current projections are
that sea levels worldwide will rise by 15 to 90 centimetres by 2100, depending on whether action is taken to
reduce greenhouse gas emissions.
"Hong Kong has substantial areas built on reclaimed land and sea level rises could impact on that, not
only on Chek Lap Kok but the West Kowloon Reclamation and the Central and Western Reclamation – the
whole lot," Mr Melville said, adding that sea-walls would be needed. Depleted fresh water supplies would be
another problem because increased evaporation would reduce levels. Mr Melville said the general outlook
could be helped if Hong Kong used water less wastefully and encouraged energy efficiency to reduce fuel-
burning. He also called on the West to help China improve its efficiency.

Today we take electricity for granted and perhaps we do not realize just how useful this discovery has
been. Steam was the first invention that replaced wind power. It was used to drive engines and was passed

To generate electricity, huge turbines or generators must be turned. In Australia they use coal or
water to drive this machinery. When dams are built, falling water is used to drive the turbines without
polluting the atmosphere with smoke from coal.
Atomic power is used in several countries but there is always the fear of an accident. A tragedy once
occurred at Chernobyl, in Ukraine, at an atomic power plant used to make electricity. The reactor leaked,
which caused many deaths through radiation.
Now scientists are examining new ways of creating electricity without harmful effects to the
environment. They may harness the tides as they flow in and out of bays. Most importantly, they hope to trap
sunlight more efficiently. We do not use solar heaters for swimming pools but as yet improvement in the
capacity of the solar cells to create more current is necessary. When this happens, electric cars will be viable
and the world will rid itself of the toxic gases given off by trucks and cars that burn fossil fuels.

The water crisis
A. Agriculture consumes about 70% of the world's fresh water, so improvements in irrigation can make the

biggest cities of the Third World, more than half of the water entering the system is lost through leaks in
pipes, dripping taps and broken installations. Even in the UK, losses were estimated at 25% in the early 1990s
because of the failure to maintain the antiquated water supply infrastructure. In addition, huge quantities of
water are consumed because used water from sewage pipes, storm drains and factories is merely flushed away
and discharged into rivers or the sea. The modern approach, however, is to see used water as a resource which
can be put to good use - either in irrigation or, after careful treatment, as recycled domestic water. Israel, for
instance, has spent heavily on used water treatment. Soon, treated, recycled water will account for most farm
irrigation there. There are other examples in cities such as St Petersburg, Florida, where all municipal water is
recycled back into domestic systems.

Like many aspects of ancient history, the origins of cooking are unclear. It seems likely that prehistoric humans

Environmentalists often fear that tourists will trample all over sensitive natural resource areas, but

often remote locales. While these criticisms are justified, Boley and Green said responsible programs promote
