What is smoking?
• Smoking or smoke-curing is a method of
preserving fish by the application of smoke
with the aid of salting, drying, and heat
treatment. Smoked fish locally called tinapa.
• the application of smoke to fish in which the
substance in smoke called creosote acts as
preservative agent
• it also involves the interrelated processes prior to
smoking such as salting, drying and heat treatment
upon which the quality of the finished products
depend.
• Smoke alone cannot lengthen the shelf life of
fish for it constitutes little antiseptic properties.
• give attractive color and distinctive flavor to the
smoked product..

Interrelated Processes
1.Salting or Brining
• The soaking of fish in brine for a certain period
of time.
• Salt improves the fish texture (i.e., it tends to
make the fish firm by lessening the water
content of the fish muscles).
• Salt also lengthens the fish storage life (i.e., at
certain concentrations where bacterial and
enzymatic action is minimized).
• Lastly, salt spices up the fish, making it tastier.
2. Heat treatment
• Contributes to bactericidal effect of smoking
• Kills microorganisms
• Inactivates enzymes
• Makes the flesh firm and less susceptible to
self-digestion
3. Smoke Deposition
• Responsible for the preservation and flavors of
smoked fish
• Smoke are composed of vapors and
particulates
Abundant chemicals found in smoke include:
- Carbonyls
- Organic acids
- Phenols
- Organic bases
- Alcohols
- Hydrocarbons( including polycyclic aromatics)
- Gases such CO2, C monoxide, O, N and nitrous
oxide
• Smoke has both antioxidant and bactericidal
properties
• As antioxidants
- Due to the high boiling point of phenols and
- 2,6 dimethoxy-4ethylphenol
Bactericidal properties
• Mainly due to:
• -carbocylic acids
• Phenols
