Views "Multiple field settings" are ignored when using Editable field Formatter

I've set up a view showing all nodes of certain type in a sortable table. Each table column refers to one of the fields present in the nodes. One of the fields (columns) is a multi-value plain-text field, and I want it to be displayed as only one value in the table cell (last added), the whole field still being editable inline upon request.

When I change the Views' "Multiple field settings" (Display 1 value), this has no effect – whenever I choose Editable field formatter, all values will be displayed in the cell.

Tried the same with multi-value Date field, same thing happens – Views' "Multiple field settings" are ignored (all values will be displayed in any case), and when I choose "Multiple values: show 1 value" in the Editable field formatter's settings, always only earliest value of the field would be displayed (while I need the latest, and there's no way to set this up).
